      I recommend you confirm from the vendor that the balut is just a few weeks old.
      Pretty sure locals eat it only while the bones and beak are barely formed so they're still chewy (and very little hair) and you can wolf the whole thing down esp if you are just in it for the "bragging rights" that you ate one of the most notorious foods on Earth.
      A bit of salt greatly improves the flavor -- esp the fluid. Don't forget to put some! Vendors will always offer salt for free.

      Important note: "Metro Manila" and "Manila" are vastly different areas. Don't assume you are in Manila just because you see a skyscraper. In fact, Manila is just a small city. More than half of the other cities in the region are larger.

      just remember: "Metro Manila" and "Manila" are NOT the same thing. Don't assume you are in Manila just because you see a skyscraper.

    Balut is not a fermented duck egg. It's a fertilized duck egg. The eighteen days thing that you mentioned is how developed the embryo is within the shell. Obviously, the more days, the closer to hatching, and the closer to a duckling the embryo will appear to be when cracked open. (Or is that quacked open?)
    The Chinese eat fermented duck eggs by coating them with all sorts - salt and ash, quicklime and rice husks, and then burying them for months. They refer to it as Century Old Egg, and when peeled, the egg is then black in colour. I don't think it's fertilized. I think it is steamed/boiled or added to a soup.
