White Chocolate Langue de Chat Cookies Recipe

  • Delicious sandwich cookies with crunchy thin langue de chat cookies and white chocolate filling - this tempting dessert is great for holidays, get-togethers, or anytime!
    Ingredients (about 11 sandwich cookies)
    Langue de chat cookies:
    - 25g butter
    - 15g fine caster sugar
    - 15g egg
    - 10g whipping cream
    - A few drops of vanilla extract
    - 25g cake flour
    Filling:
    - 40g white chocolate
    - 12g butter

      I tried finding it online but seems impossible if you live in the west, made one on my own with a food safe silicone mat, have to say it was worth it, they are a joy to eat.

      Thank you for stopping by! :) You can try using piping bag for both the cookies and the filling. The batter is very soft so it would be helpful to refrigerate it for half an hour or so before piping. I think the filling can be prepared right after the cookies are taken out from the oven, so that it is still a bit soft and ready to be piped when the cookies are completely cool. You can make round cookies too, that's easier with a piping bag. By the way piping tip is not necessary for this - a small hole on the tip of the piping bag should do the job :)

      Hi, thank you for watching! Egg yolks make the cookies a bit more moist, a bit fudgier and melt easily in your mouth, while egg whites make the cookies a bit drier and crispier/crunchier. I find the moist texture fit better with this recipe, so I have omitted the whites. You can use yolks only, whites only, or whole eggs for the cookies, depending on your preferred texture. Just use the same amount as the yolks called for in the video :)
