  • In case you haven't noticed, we love seafood but we gotta take it in moderation since none of us are getting any younger :p. This seafood porridge is so easy to cook and so yummy. Literally just dump everything in the rice cooker and voila! The seafood you use in your porridge doesn't need to be exactly like ours. As long as they're seafood, they're good to be used to put this dish together.

    Ingredients:
    Serves 6 pax
    Making the porridge base:
    =====
    - 9 cups of water
    - 30g of dried scallops soaked in 1 cup of hot water - shred scallops when soft and pour all the contents including water into the rice cooker
    - 1/4 cup of glutinous rice
    - 3/4 cup of Jasmine rice
    Making meatballs
    ====
    - 100g of ready made fish paste
    - 125g of minced pork or chicken
    - 1/4 teaspoon of ssalt
    - 1.5 teaspoons of cornflour
    - 1 teaspoon of flounder or sole fish powder (can be replaced w/ 0.5 tsp of salt)
    - A few dashes of white pepper
    Other ingredients:
    ====
    - 250g of prawns (marinated with a pinch of salt & sugar)
    - 100ml of cooking oil (can use peanut or vegetable oil)
    - 400 - 450g of crab
    - 1.5 teaspoons of salt

    Wow, it looks like such a satisfying yet light lunch, especially if during the week one has over-indulged in too much spicy or oily food. It gives the digestion some respite, but is still super-yum with all them goodies inside. So nice to have something without the dreaded MSG too!

    Very luxurious! There was once I made salmon porridge and it's so good, made my own salmon fish stock with the bones to cook the porridge. I love porridge, can't decide which is my favourite haha. Its a close call between tingzai porridge or pork with century eggs.

    I tried your teochew porridge recipe n taste good. I like spice n pan as the recipe r all good n clear to follow. Question: what is the purpose of glutinous rice? Can use all normal rice?

    Do you think pulsing the rice in a food processor prior to cooking would make the congee cook faster since congee is usually made with broken rice?

      Hi G L. So sorry for our late reply. No worries about the crabs scratching the pot because you don’t have to stir them in the pot. Just get them cooked in the pot, remove from pot then stir the porridge to ensure that the flavours get mixed evenly. Happy cooking!

    If I cook this in a pot over the stove, do I use low heat? Does the cooking duration remain the same?

      Hi Kai Li. Once the porridge has come to a boil, reduce the fire to low to simmer. Keep the lid ajar as you cook. Timing wise, you can use visual to gauge. If we’re not wrong, it should take roughly the same time.

    With all that seafood its sure to taste good. Where to buy sole fish powder. Can substitute with ikan bills powder? It’s troublesome to make. Did u soak the rice first?

      Good morning Juliet. We bought the sole fish powder from Shengsiong but we noticed only selected outlets carry them. You can also make your own sole fish powder. Buy dried sole fish then roast them for a bit before grinding them into powder. Yes you can substitute them with ikan bilis powder but the distinct taste of sole fish will be missing. No we did not soak the rice. Only washed them. Hope this helps.

      The sole fish sounds like what my Hokkien great-grandmother used in her porridge. She would fry the fish, then crumble it over the porridge. A lot of people nowadays don't use it, or know what to do with this type of dried fish, that's a real pity.

      You can find it at yue hwa, it’s plaice powder (大地鱼粉) from hong kong, the brand is 老友记, hope this helps

    What type of cup? How does 30 mins of my rice cooker = your rice cooker?

      Good morning. We used rice cup to measure rice and water. You can just cook for 30 mins if your rice cooker doesn’t have the preset function.
