    Bo Kho Ingredients:
    1 lb ground beef
    15 ml or 1 tbsp vegetable oil
    1 sliced onion
    6 cloves minced garlic
    3 Tbsp minced ginger
    2 tsp five spice powder
    2 stalks lemon grass
    1 tsp brown sugar
    4 Tbsp tomato paste
    4 cups beef broth
    2 cups sliced carrots
    200g or 7oz rice noodles
    3 Tbsp soy sauce
    2 Tbsp fish sauce

    Hi Kevin. I managed to get a physical copy of your book in the UK. I highly recommend the Stockli dehydrators from switzerland. They have stainless trays and can stack up to 10 of them. Made a tuscan veg soup last night, which needs pesto and parmesan kept seperate. About to try it now. Thanks for the inspiration :)

    Gordon Ramsey has a great way to slice an onion that I use all the time. You should check it out. Not trying to be a busy body here. Just a great technique I learned and am happy to share! I'm definitely trying this recipe! Thanks!

      Thanks David, I am aware that chefs do a few horizontal cuts when dicing an onion and I am a big Gordon Ramsey fan. But I prefer this method that I learned from Alton Brown. It gives about the same effect and for this dish I like these longer curly pieces of onion. Personal preference.

    Have you ever seen the Snow Peak SUKU SCT-125? It’s a spork (FOON) like utensil. It’s my favorite “implement of destruction” for eating noodle dishes 😆
    I can’t wait for the water to get wet again so you can get out paddling and camping

      I own a few but I never caught on to the spork thing.I am a spoon man myself. The water should get much softer this week! 🍴🍜😉

    Looks delicious. How would you describe the taste / flavour ? I like the rice noodle idea, perfect for backcountry.

      Thanks Derek, I would say that the five spice is the main flavour and it is one that is hard to describe. It has a rich full taste and is 'spicy' but not hot. Five spice has cinnamon, fennel seed, star anise, and cloves in it. Combine that with a bit of sugar, the ginger and garlic it doesn't leave you lacking for anything. I hope that makes sense.

    Always enjoy your recipe videos Kevin. Lots of prep but how many meals do you get with that amount of prep?

      That one I could stretch by adding a bit more noodles to get 4 individual meals out of. Lately I have been doing double batches of each meal and that will easily get me 8 individual meals with marginally more prep.

    I love these videos. We camp in a small trailer these days, but we will often spend a week in the Adirondacks so having a shelf stable meal is helpful, so we don’t have to go shopping.
    A question: have you tried using less liquid to start with so less dehydration is needed?

      Some people will strain the stew and then simmer down the broth on the stove. Another way is to use a bouillon cube or powder instead of stock. I just prefer the stock and I don't mind the extra time it takes to dehydrate. But that is a good question and I think the 'right' answer comes down to personal preference.

    Sounds delicious! How spicy would you say this is? Hubby likes only mild spices. Gonna make lots of your recipes this summer. Bought dehydrated meals have doubled in price.

      It isn't spicy as in 'hot' but the five spice flavours are relatively strong. My wife is sensitive to strong flavours (and heat) and finds the five spice a little too strong when I make this at home, but after dehydration it is less intense. You may want to experiment a bit and dial the five spice back on your first attempt. You can always go stronger the next time.

    Hey Kevin. What size pot do you use to rehydrate your meals?

      I usually use a 700ml pot. Lots of folks will use a smaller pot but I like a little extra room to stir things and not risk a spill.

      @@KevinOutdoors Perfect thanks! I've been using only one pot to boil water, rehydrate and everything else, but starting to get fed up of being "stuck" waiting for one thing or another to happen before I can do something else. Going to give a second pot a try, with a cozy of course lol

    Hi Kevin. How do you measure how much water is necessary in order to rehydrate your meal? Too much water and you will end up with Bo’ Kho soup instead of a stew. Not enough water and you ruin your meal.

      Great question. For most meals I simply dump the meal into a pot, I shake the pot so the food is level then I add water until I just cover the dry meal. For a stew I add about 1 cm (~1/2") extra, for a soup I would add about 2 cm (~1"). It is easier to add more water after the meal rehydrates to get the consistency you are looking for.

    Where do you get the tiny bottle for the soy sauce?

      Those are Nalgene bottles. They make a wide variety of sizes. Most good camping supply stores will sell them. They are also available online.
