Watch a few videos from Guga here on YT for some great advice on how to grill with charcoal like the pros, I have been running Webers for over 20 years at home and can confirm that man knows his way around a charcoal grill! I'm glad the wife liked the steak! The main thing I would change with your method, is to spread the coals out after you get them lit with the chimney. That will give you an evenly hot surface to sear your steaks for about 1min/1.5mins per side and then finish cooking them with the lid on like you did to your preferred doneness. Fire is your friend for the first few minutes! It really seals the juices and flavor in while it's cooking, and adds a nice tiny little bit of a crust to the outside of the steak AKA that nice reddish/copper color before it turns brown and black from burning. You can also use a bigger weber like yours to do a sear and off-cook by moving your coals to one half of the grill to sear the steaks off and then use the other side to get them off of the heat and cook it like a mini smoker/oven. You'll need to pick the grate up and scoot the coals over all the way to the wall once you sear them all off, but it works great!

I always prefer bone-in, whether it be ribeye or pork chop or chicken. Meat always comes out more tender and tasty.

It's a tomahawk with the bone cut short basically in my opinion beef and chicken taste much better cooked bone in
