      @@Napoleonic_S Yes, Japan has always had wagyu, however America didn’t get purebred Wagyu from Japan until recently.

      @@fishtaco2996 it depends how you define wagyu. If you mean Japanese cattle then that's 35,000 years ago. If you mean those Japanese cattle bred with British, Continental, and Mainland Asian cattle, then that crossbreeding started in 1868 and the breed was only solidified into its 4 breeds in 1910 when the crossbreeding ended due to getting the desired results
      Only two of the breeds are exported to the US, the black wagyu and the brown (red) wagyu, and that only started in 1975
      So yes the Japanese had wagyu during the Great Depression no matter which metric you use

      Most lactose-intolerant people can eat cheese just fine. Processed cheese like Guga used tends to be problematic, but a proper hard cheese is usually fine.

    Love the respect given to cheap ingredients! I have totally ruined my family from being impressed with high dollar restaurant food, when I can usually make something better with the cheapest stuff out there.
    Some folks say that the best foods to eat depend on the best ingredients - but I know better - the best food to eat depends on how the cook treats the ingredients he has to work with. Period.

I won't touch a nasty plasticy Kraft "cheese" single, SO gross, but the American cheese you get sliced at the deli counter off the block, that's good stuff.     Line cook here. Mandolins are sharp enough to cut through finger bones. I've seen it happen before. If you don't have a mandolin guard, use a couple clean kitchen rags ontop of whatever you are slicing, the rag will be struck long before your hand reaches the mandolin.

    usually these were served with only ONE patty on sandwich bread with ketchup and pepper. my buddy's gramps used to watch us kids and he would make these all the time and tell us how bad it was in the depression.
    of course, he would serve us double burgers with all the fixings and all the coke cola we could drink' during the summer or Milk in winter, (which was strange as we lived in Perrine Dade County Florida.)
    of course, the burger meat was made with off-cuts, and he told us they were Terrable! lol

      I'm severely lactose intolerant, and nothing is better than using ben and jerry's as a weight cutting tool let me tell you.

      If you have an intolerance you should be able to eat many types of cheese. Lactose is eaten by the culture in curd when making cheese. The harder the cheese the better like Parmesan, Swiss and cheddar.
      Still for average intolerance a small portion of soft cheese isn't a problem

    In the same time period, the South was creative with their meats as well. A thing called a Slugburger was born. It's a burger patty made with a little meat (whatever they had on hand) and stretched using fillers like flour. They are still popular in my area: Memphis TN to Tupelo MS, but especially my hometown of Corinth MS. We have a Slugburger festival and they are quite good. It results in a slightly crispier patty but the flavor is there. And you can get one with lettuce, tomato, pickle, etc. for a dollar or so.

    Onions weren't just to fill the burger, they also tenderized cheap and previously frozen cuts of meat. White Castle cooks their burgers over onions to this day which results in very very tender patties.

    This burger is actually very similar to the cheeseburgers my mom always made us, though the prep is a bit different. Instead of the smaller "smash burgers" she would go for a slightly larger patty and seer a few burgers at a time on the stove while adding the onions on top, flip them with the onions over and then de-glaze the pan with some fluid she never revealed to me and then cover the burgers with a lid to finish them off. Cheese would be added towards the end and the result was a thick but incredibly juicy burger packed with flavor. I know that she learned how to cook primarily from my great uncle who is a caterer but neither of them have been forthcoming with any of their recipes or techniques.

    Guga Foods, something you might want to try if you're lactose intolerant is lactase pills. It basically contains the protein that breaks down lactose, which means lactose intolerant people can eat diary for a little bit and have little/no side effects.

    When i go off my « traditional » american cheese burger, i caramelize onions in maple syrup and balsamic vinegar until syrupy, and put brie or camembert cheese on the patty to tame the sweetness
    I would also reccomend draining or wiping off some of the fat, even if i admit that a good burger should make a mess

    that's how you are supposed to cook french onion soup. add them as you cut them. you have caramelized all the way to crunchy onions. those burgers are happening this weekend.

      I get what you’re saying about American cheese. I found Land O’ Lakes pretty good but I’m not sure it exists any more. I prefer the sharpness of an outrageously old cheddar but sadly cheddar doesn’t melt nicely, even when shredded. American cheese is more about the texture than the flavour. Havarti cheese melts well and is really creamy but is often so mild it gets overpowered by the burger. What works well, if you’re a little adventurous, a slice of havarti for the creamy texture with some crumbled Stilton or Danish Blue. I prefer a thick slice of grilled Spanish onion and several layers of crunchy iceberg lettuce. Looks like I’m having burgers this weekend.
