      I eat beets every day too, and find that steaming them well removes the earthy effect. Probably steaming doesn't destroy much of the goodness as frying would.
      Update: sorry, only now did I notice 'raw' in your name. Yes raw beets would taste earthy in a way. For those having cooked food as well as raw steaming would be good I think.

    I’ll gladly eat arugula but I just don’t care for beets. An Omaha restaurant has a juice with Orange, lemon, turmeric, ginger, and beet. That’s as close as I get.

    Beets are a great addition to my salads and smoothies. They're tasty and super healthy.       @@jukijunk I mean, technically yes, but it's not going to be a very pleasant experience! The best way to get the citrulline from the rinds is to juice them. Drink the liquid and discard the pulp. You can add /mix in some watermelon fruit to the juice to sweeten it up and make it more palatable to your preference.

      @@roch369 The reason it's advised to chew your food is because the physical action brings up saliva which when it coats your food is the first part of the digestion process. So you can get this same effect by taking a sip of smoothie, and chewing it as if you had taken a bite.

    I remember reading some studies a while back showing that the composition of your diet greatly affected whether or not the dietary nitrates you consumed would have a beneficial or detrimental effect in your body. Meat eaters by and large had microbiomes that converted the nitrates into inflammatory substances while vegetarians and especially vegans had the opposite effect.

      The nitrate additives in meat combine with heme iron (only found in meat) and, via bacterial action, are converted into nitrites, which are potent carcinogens. Vegetarians and vegans could consume the same nitrates without harm because they're not eating the meat, which supplies the heme iron.

    Hey, all my favorite vegetables have nitrates! Spinach, lettuce, radish, and red beets are all super high in nitrates that supposedly are good for my high blood pressure. Oh, I just got back from the doctor to refill my blood pressure medicine. He did some blood work for the second time since I went vegan. My kidney eGFR is a couple of points higher for an 18 point turnaround since I went vegan. My total cholesterol dropped 15 points but LDL mysteriously went up one point but is still 21 points lower than before going vegan. My blood sugar is normal. My doctor told me I'm one healthy dude!

    Great video Michael - you beat me to it. You should also be aware that some (even vegan) pre-workout powders, creatine nitrate and nitric oxide supplements use "isolated Nitrate", which can also form carcinogenic n-nitroso compounds in the gut. Some add the antioxidant vitamin C to help reduce this. For those who know me, my vegan company uses only natural plants to boost nitric oxide (more than beets) and would never use isolated nitrate in any product.

    Thank you for clarifying the three nitrogen compounds. I too didn't know of nitrates naturally present in animal foods. And thanks for the laughs. 😀. Guess what, I eat spaceships almost every day in my steamed vegetables. Also tomatoes, cabbage and beetroot, and a few other vegetables like peppers, okra, green beans, eggplant, pumpkin and more... just a bit of each, obviously.
    One sort of hack to share: spinach becomes a drag to buy as often it's sold out in the shops nearby, or the slimy crushed bunches are all that's left. So quite a while ago I got the idea - clever, I think - to order spinach powder (and more recently coriander leaf powder too) and add a heaped teaspoon into my food. (More could be added of course.) That way I get some leafy green goodness every day, Plus the pale green of cabbage and darker green of other vegetables. No scouting around for spinach in the shops.

    Mic, we are rocket or roquette in Australia too. British influence and French cuisine influence upon the British. In my local supermarket it is roquette. Your arugula is Spanish no doubt. In Britain they use courgette for zucchini but we've busted the influence on that one and called it zucchini. All the different names can be confusing. We say cos for romaine. You say scallions we say spring onions. In Britain it's aubergine after the French but we say eggplant , same as you. I'm sure there's more, but that's what I can think of for now.     I love beets (we call them beetroot in New Zealand. ) I can eat them every night, chopped up and boiled for 15 mins. I also love spinach chopped up and steamed for five minutes.

    Dr. Esselstyn recommends eating a raw dark green leafy vegetable like kale, “anointed” with some balsamic vinegar to maximize the amount of nitric oxide that reaches the endothelial cells in your blood vessels. I assume this starts with nitrates, but I can’t say for sure.

    My dentist advised me against using mouthwash. He said that mouthwash can disrupt the balance of bacteria, wiping out helpful microbes. I had come up with my own mouthwash recipe, and he said that as far as mouthwash went, it was pretty good, but that I didn’t need it.
    Incidentally, here’s the recipe:
    1/2 cup water
    1 T xylitol
    1 t salt
    3 drops oil of clove

    Hey! Feel like it would be a cool topic if you were to discuss the program to cull barred owls to conserve the spotted owls. There are a bunch of “conservationists” that are pro cull. I’ve read several studies about these types of practices and the end results never help. I would go in further depth but I’m confident you understand why I pitched the idea to you.     Meet is the natural food for humanes. My own experience, in Argentina, people eat almost only beef, and look very healthy, men and women. In India, however, people are mainly vegetarians, but does not look very strong nor healthy.

      This 'observation' of yours demonstrates why it is vitally important to study the science of human nutrition rather than stating an opinion based on assumptions.
      India is home to all kinds of people who have all kinds of religious beliefs and diets. Meat is not forbidden, and is regularly consumed, by many in the subcontinent; including fish, pork, especially chicken (and other birds), 'seafood', lamb and mutton and yes, even beef. In addition, animal by-products, such as milk (in particular) but also eggs are eaten by the majority of the vegetarian population.
      Aside: My minor was Asian Studies, focused on South Asia. In addition to formally studying India, I stayed long-term on the sub-continent - in other words, uni studies, and colloquially/dialectically lived, the culture(s) and meat, and/or milks and eggs, are consumed by the population

Many restaurants, guest houses and hotels will only have vegetarian options on a menu but a quick request, sometimes coupled with a little baksheesh, and voila... meat appears.
      Openly available are lamb burgers and even McDonald's has 'Maharaja chicken' and 'fillet of fish' sandwiches on the menu. Street-side food wallahs sell grilled fish, chicken, etc.
      Remember, there are Muslims, Christians, Sikhs, Jews, Parsees (Zoroastrians), and atheists (and tons of tourists) in India. Even many Hindus eat meat.
      You can use your search engine to see what comes up when you input 'number of Indians who eat meat', or similar phrases.
      Maybe look deeper next time.

    As far as I know companies started putting vit c in their processed meat half a century ago when they were ‘encouraged’ to reduce nitrates… a healthy dose of daily vit c should push the nitrates over to the healthy path no matter what source they come from….

    If the antioxidants in vegetables push nitrate to the right pathway, would that also work if you just ate a bunch of antioxidant rich vegetables before eating meat? Just scientific curiosity.

    I love cherry juice, in small doses, and this new Super berry and herb antioxidant mix I get. I didn't know about the naturally occurring nitrates, but I'm not surprised they're highest in lamb. I always thought we shouldn't be eating babies; no matter what species (of course I had no clue how young most animals are sent to slaughter). BTW, if anyone wants to respond negatively, go ahead, but don't expect a reply - I'm not going to waste my time. Great video as always Mic👍✌

    For the people who struggle on a plant based diet, eat a little organic meat and dairy a few times a week. The organic animals are far better treated and they are far better for the planet. It is an acceptable compromise that if more and more people did, the world would be a far healthier, fairer and saved place

    We have known for like 30yrs that unregulated NO is probably the biggest single factor in poor health outcomes. It's not so much the nitrates/nitrites that are the issue, but that they are unregulated. People need enough antioxidants or polyphenols that act as antioxidants. Then NO will be regulated. There was a big push for antioxidants when this was found out, but this is somewhat being ignored now. Like a vegan will be getting less nitrates/nitrites, but if they arent eating enough antioxidants, they will still have an issue with NO regulation.

    Mitch, have you seen Chris Jones' book 'Swine Republic'?
    I'm about halfway through it and, anyway it's interesting to see you put this video out when I'm reading about all the nitrates that end up in our water.
    Also, Chris Jones and some people in the law sector have teamed up in a new nonprofit called Driftless Water Defenders. I joined in large part because their mission will hopefully result in putting pressure on the animal industrial complex in the state. It would be great to have a fellow advocate for the animals involved.

      Processed meat risks far outweigh the risks from fresh meat. Less meat, or no meat at all, is lowest risk of all. Definitely cut out the processed crap.

    According to the American veterinarian society animals get most of their nitrates from eating excessive food with fertilizers. Maybe that's how the red meat gets its nitrates from? Do you have a counter argument to this?

    It took me 20+ years, however, I did track down the source of my Gout.....Sodium Nitrate! Although Nitrates are found in the blood of all meats, the Sodium was the Kicker! 20+ years free of that nasty affliction! Indeed, it used to bring me to Tears Onward 🌠

    It's weird when I eat any food healthy or not that has nitrates I get an excruciating migraine. Beets are the worst for me. My blood pressure has always been low & foods that are good for arteries cause me severe pain and sickness. Eating plants & oil free for 2 years did not lower my cholesterol. Only thing that did jogging 10 minutes a day. I mean ldl & triglycerides went from over 100 to way lower than 100 HDL always 50. I was eating cheese and whatever I want. Also no high cholesterol in my family & no one is vegan. It's weird but when eat in moderation & exercise I'm my healthiest not eating all plant based.

    I absolutely love arugula, i could eat it much more than i can afford to.
    At one point i was able to get it in 500g bags and at that point i was blending it up into basically juice.. it was awesome. Add a bit of lemon into that.

    Cancer associations love to play with stats. Another weak study from data sourcing. The results had to match the WHO outcomes. Sorry plant nitrates bio availability is very low. Good luck to move the needle on nitric oxyde which helpg blood flow.
