- Professional baker Bill Clark and home cook Emily are swapping ingredients and hitting the kitchen to take on each other’s extremely different cupcake recipes. We set Emily up with $218 worth of supplies - everything she’d need to make Bill’s decadent German chocolate cupcakes with coconut pecan caramel filling. Meanwhile, a modest $17 worth of ingredients was sent back the other way for Bill to elevate into something gourmet. As is customary, food scientist Rose dialed in to assist our dear Emily with a few questions she had along the way. Which one of these cupcakes is your cup of tea?

I love how approachable Chef Bill is, like not making a big deal put of his talents and expertise.
From now on when switching ingredients, Emily should just throw in a random bottle of Ketchup just to mess with them.

The one thing I like about this series is it demonstrates how a pro's technique can play a huge role.
Bill is my favourite as he actually uses the ingredients given to him in keeping to the spirit of the challenge. I get so annoyed at how often the other chefs use their own fancier ingredients.
They have stopped using their own fancier ingredient for months now since they have returned to filming in the studio. Many many moons ago the the chefs filmed from their house so they use the fancier stuff they already have.

Honestly, one of the best pairings of people. I love their energy and how much fun it is to watch them do these things
Pro tip guys! Double bag your frostings, use 1 bag and the tip for a sleeve, put your frosting in a second bag, then you can take the other bag out and reload easier/cleaner/faster. This works for other things as well, not just frostings. As someone who during Easter has to make over 200 deviled eggs for the day, trust me.

absolutely, and I just did a quick search and $85 for 1 sheet doesnt look right either. I saw it listed as 25 sheets for $60... EDIT: I see now she used more than 1 sheet, but the point still stands

It's AMAZING how sugar eggs flour butter can be combined to make so many different things. Emily's ingredients cupcake... The buttercream, the marbling, the sprinkle etc. Very nice.

Baking is so hard so I give Emily prop for trying. Chef Bill was so nice cuz he didn;t give her a hard frosting like Italian buttercream or crazy pipping detail. He kept it pretty basic but make it so fancy at the same time which can be pretty hard.
Such a good episode. He really showed how versatile each basic ingredient is.
Bill Clark is great hope to see him here more.

Emily. The piping tip *can* actually go on the outside too. That's how you can easily switch between tips. Mind you, I personally hate using that method but it also wastes less frosting. Technically. :P

I truly appreciate how these videos don’t become ‘amateur doesn’t use expensive ingredients properly and everyone is frustrated and nobody learns anything’. Not only do we get to see someone take something simple and make it just a bit nicer, but we also see a normal home cook dabble with fun crazy ingredients without being thrown completely into the dark

King Arthur's flour is the BEST flour for baking. It's the only flour I buy honestly. And Kerrygold butter is one of the best tasting butters ever🤤❤️
I've always used KA as well, but recently I've been trying Arrowhead Mills. I think it's just as good as KA, if not better. Unfortunately, along with being slightly more expensive, I found out AM is owned by a giant corporation, so I'll probably go back to KA. AM's yellow corn meal is fantastic as well, but agan, expensive.

Pudding based buttercreme (I believe it's called German buttercreme) is my absolute favourite. So rich and flavoured, not pure sugar sweetness.
