And you should hit up Dongmen Mango Smoothie House if you haven't been and YongKang green onion pancakes with ham and egg. Those are my go-tos!

Well to actually answer your question about must do's in Taipei I'd recommend the following in no particular order:
Batting/pitching cages on the top floor of Eslite in Ximen.
Ice Monster for some refreshing and seriously creative twists of shaved ice.
Costco, just to check out the differences between state side and Taiwan + hot dog.
Shrimping. I'm not sure which is more difficult... Catching, skewering, or grilling. Fun place to meet the locals.
New pizza place! Gusto Pizza near Dongmen MRT. Get the Dennis Special.
