The curry chicken salad recipe is lit. I ended up not finding mango chutney, but found a coconut/mango blend and I swapped the celery and raisins for apples--it's incredible!
She wants to be the Alpha female underneath the domesticated image she projects to sell her products. She's as tough and savvy a CEO and negotiator as any comparable man in the days when men exclusively dominated the business arena.

Ina's calm, relaxed, no drama demonstrations have always been the other part of the appeal of the show, in addition to numerous very doable recipes. And it's entirely OK that the pricey ingredient recipes can be special occasion only, use substitutions whenever possible or skipped entirely.
I've make the curried chicken salad many times with a few changes. I use a touch of white balsamic vinegar--not wine, golden raisins, dried cranberries or chopped dried apricots, omit the salt and celery, and use roasted chicken breast---store bought, pan fried or frozen. Chutney is a bit salty so I wait until everything's combined and chilled then test for salt before serving.

I love Ina! This woman taught me how to cook and I've remembered things when cooking because of her. But I have to say the way people (including Ina) cook potatoes when making potato salad irritates me soooo much.🤣🤣 the cooking of the whole potato and struggling to peal it after I peal my potatoes cut it the size I want then boil them and its done.😂😂

I make a similar tuna salad but it's actually a salad, not on bread. Chopped raw broccoli, cauliflower, celery, onion and strips of carrot with tuna and tuna oil, lemon juice, minced garlic, salt and pepper and sometimes add some chickpeas. Honestly, I buy a party size veggie tray from the grocery store and use most of the ingredients for the salad, stays in the fridge for a week so great for workday lunches.
Great episode with one of my favorite chef's. I feel fortunate because I learned to cook & developed my tastes by watching Food Network (FN) when the chef's taught technique. I rarely watch FN now because I'm not a fan of the competition shows.
This was actually my first introduction to pesto pasta and peas,but my cousin made it hot as a side dish with chicken cutlets,and i have been making and loving pesto ever since. I make martha Stewarts easy pesto with pine nut its the best

You could pack it differently and end up with such radically different results - surely there’s never a time when weighing it wouldn’t make more sense? Volumetric measurements only work for liquid or powder ingredients where you can’t introduce massive user error from either the recipe writer and/or the cook. Nonetheless I adore Ina and can watch her cook for hours on end without getting bored. I just love her.
Ina and the Barefoot 🦶 Contessa had a chokehold on Saturday mornings when we would clean 🧼 the house and be rewarded with making one of her recipes for dinner. It always was so good 😊
Out of all the chef/ cooks on T.V., she was always my Fav👍🤗, & America's TEST Kitchen on PBS--- but yrs. ago there was Martin Yan,, of " Yan can Cook", ❤ that guy, he was so funny too!! It was also on PBS
In response To the comment that she puts everything but the kitchen sink in her recipes I can tell you every one of her recipes I have tried have turned out incredibly delicious so try it before you knock it. Shes an awesome cook and teacher and she tests every recipe to insure it works and her efforts pay off for sure.

For a change, use homemade honey mustard dressing on chicken salad. I still add a bit of mayo for the creaminess, but wow! Is that good!

Traditionally, Coronation Chicken would have raisins or sometimes some grated apple if raisins were hard to find.

Chef Michael Smith only steams potatoes, saying they absorb much less water and so the texture is better. The trick is getting the timing right.
That pasta/pesto salad is a hit every time I make it! I also add some grape tomatoes and (surprise) loosely-chopped water chestnuts.
