  • This fluffy frosting tastes a lot like whipped cream. It's not too sweet and super airy. It is traditionally served on red velvet cake, but it is good on so many things. Watch how to make it and see 4 simple ways to pipe it onto cupcakes using my 2 favorite piping tips.

    Do you use cream cheese or ermine frosting on your red velvet cake?

    My sister makes me a red velvet cake with this icing every year. My all time favorite. 😍

      It really is! It is great on brownies with raspberries too!

    I'm trying to get it, first batch came out curdled. Yours looks really nice and fluffy.

      Make sure the milk and flour mixture is fully cooled or even chilled before you add it. It should be a thick pudding consistency before you take it off the stove and even thicker once it is cooled. I hope you will give it another go, it's worth it!

    Looks pretty easy. How long can it stay out on a cake before it starts to melt?

      As long as it's a reasonable temperature, it will hold up for quite a while. I wouldn't use it in super hot temperatures, the butter gets soft pretty quickly if it gets too far above room temperature.

    Hi after its fully chilled do i have to bring it to room temp or can I use the pudding chilled when whipping it up with the butter?

      I usually add the cold pudding mixture to the butter and it works great!

    I realize this video is not a brand video but hope you see my question! 🙂 Should I use salted or unsalted butter?

    Can one refrigerator the milk pudding over night and let it come to room temperature when one is ready to mix it with the butter? Or does that ruin the final texture of the ermine frosting?

    • @CookingWithCarlee
      @CookingWithCarlee  Před 3 lety

      You can definitely do that! If your butter is at room temperature and beat smooth, you can add the pudding cold. That will make it easier to pipe if that is your intention. I hope you enjoy it!

      I have not tried margarine. I think people make a version with shortening, but we prefer the butter personally.

    I just ordered a buttercream fristing cake from an amazing baker. She used Ermine frosting and that was the grossest crap I've ever had. No-one liked it. Not even my 8 year old birthday girl. If people are gonna use the gross concoction they should warn the customer.

      I am sorry you didn't like it. I am wondering if there was something wrong with it. Either way, I agree... you should get what you ordered.

      Sounds like they might have used stale shortening instead of butter.
