Crispy Masala Dosa Recipe | Uttapam Recipe | Coconut Chutney | Kunal Kapur South Indian Breakfast

- Watch & learn the authentic way to cook dosa, uttapam& coconut chutney. The correct pronunciation of Dosa is दोसा & not डोसा but in my defence having a Punjabi accent it will take time for me to pronounce it right ;-)
~Ingredients~
For Masala:
Oil - 5tbsp
Dry red chilli - 2 nos
Mustard seeds - 2 tsp
Curry leaves - a handful
Roasted channa dal - 1 tbsp
Onions chopped - ½ cup
Green chilli chopped - 2 tsp
Turmeric - ¾ tsp
Potato (boiled & mashed) - 1½ cup
Salt - to taste
For Batter:
Boiled rice (soaked) - 1 cup
Raw Rice (soaked) - 3 cups
Urad dal (soaked) - 1 cup
Channa dal (soaked)- 1/4 cup
Methi seeds (soaked) - 2 tsp
Salt - to taste
Water - 1½ cup approx
Oil/Butter - Drizzle
For Uttapam Topping:
Onion chopped - ½ cup
Tomato chopped - ½ cup
Green chilli chopped - 2 no
Curry leaves chopped - a handful
Coriander chopped - a handful

I am a South Indian and I add 1tsp sugar while grinding the rice to add more crispiness and taste. And I can also tell u a dosa not made on an iron tawa is not a dosa. On Iron tawa u can rub a very slight amount of ghee/oil/butter and its never sticky.

I always cook dosa on nonstick. It's better than MTR Bangalore paper dosa. Thanks.
