- Ingredients:
1 boneless pork chop (about 250 g per serving)
2 eggs
75 g flour
100 g bread crumbs
200 ml oil for deep frying
2 medium sized tomatoes
2-3 cilantro (only leaves)
1 piece of lemon
Salt
Pepper
Method:
1. Cut excess fat off your pork chop. Beat eggs slightly.
2. Cover the meat with plastic wrap and pound with a kitchen hammer till about 0.5 mm thick. Season with pepper and salt on both sides.
3. Heat up the oil to 180-190 degrees in a large pan.
4. Dust the meat with flour, dip into the eggs and let excess drip off, cover with bread crumbs. Carefully put meat into pan.
5. Fry for around 2-3 minutes on each side thill light-golden. Let excess oil drip off. Place on a serving plate.
6. Sprinkle with a bit of lemon juice and serve immediately with a light tomato salad: finely chop the tomatoes, cut up the cilantro leaves and mix together adding some lemon juice, pepper and salt just before serving.
This is one of the fastest and easiest dishes to cook. As you pound the meat it will be really tender even if you use cheaper cuts of meat. It will also cook thru real fast. Thanks to the breading the dish is crunchy on the outside and the meat stays really juicy. And if you substitute pork for veal you will end up with a real Vienna Schnitzel.
Bon appetit!
Отлично 👍
