Anyone Can Turn Plums into Homemade Plum Wine

  • Homemade fruit wine yields amazing wine but takes time to enjoy the final result so here is my journey from harvest to glass.
    Recipe starting with 3 gallons yielded 7 x 22oz bottles:
    Plums: 9 lbs
    2.1 gallons of RO water
    6 lbs cane sugar (1 lb sugar to 1.5 lbs fruit)
    1.5 tsp acid blend (0.5 tsp per gallon of juice)
    1.5 tsp pectin enzyme (0.5 tsp per gallon of juice)
    3 Campden Tablets (1 tablet per gallon of fruit)
    1 packet of wine yeast (Used Lalvin Bourgovin RC212 and then KV-V1116)
    3 tsp + 1 more yeast nutrient (1 tsp per gallon of juice)
    Original Gravity: 1.101
    Final Gravity: 1.002
    ABV: 13%

      I have opened a few bottles this summer and it tastes delicious, really happy how it turned out. It you are interested it making some yourself now is the time as it is currently peach season!

      I use the iNaturalist app all the time! I used it to find apples, these plums and also lots of things you cant eat (just as important!)

      Yes! Took like an hour but worth it in the end. I cut around the pit with a pairing knife and used the tip to remove the tiny pit.

    Why not squish the plums instead of leaving them as halves?

      I squished them after I removed them from the liquid to get maximum juice yield.

      That's what I'd do. Grapes are crushed so why not plums? Plus I'd started with 1118 Champagne Yeast. I might try making some because I have some plums coming ripe that I can have. I will also freeze 1 whole lemon, thaw it and use it plus 1/4 of its peel and a pinch of ginger in my mash.
