Hey Gozney, a fire management video would be a great complement to wonderful recipe videos for baking.

What is the advantage / effect of whipping the butter if you're just going to roll it out later?

Was that dark part on the back side just optical, or was it burnt, or was it just dark coloring from the [beautiful!] cast iron skillet?
I ask because sometimes my lighter food comes out darker (not burnt) in the cadt iron. So I choose other pans if I want to avoid the dark color. (Perhaps my pan isn't seasoned properly!)
When will the commercial sized gozney be available in the US??
