Greek Gyros how to marinate and cook on a charcoal spit

  • With the help of Nick the spit master we show you how to marinate and prepare Greek Gyros and then how to cook it on a charcoal spit.
    I used 7 kg of lamb shoulder and 7kg of chicken thigh which is enough to feed 20 people.
    Nick has shared his marinate recipe, however you can adjust the quantities to your taste.
    Nick the Spit Master's secret Gyros spice mix:
    Mix spices together into a jar.
    • 2 tbs Chicken spice
    • 2 tbs Steak spice
    • 2 tbs Cumin
    • 1 tbs Paprika ground
    • 1tbs Garlic powder
    • 2 tbs Parsley dried
    • 4 tbs Oregano dried
    • 4 tbs Thyme dried
    • 1 tbs Salt
    • 1/2 tbs Black pepper
    Add the spices and two tins of crushed tomatoes into a tub or in this case the meat bags, mix well and allow to marinade overnight or 24hrs, the longer the better.
    It will take 1.5hrs before the meat starts to cook on the spit. You do the first cut and then every 15 mins or when the gyros has browned.
    Nick the spit master uses a serrated bread knife to cut 1/4 inch deep slices .

    Clever. Looks like there is wheel from washing machine and power window motor to rotate the skewer. Looks so delicious! This make me want to go Geece with my girlfriend to eat and admire the nature and culture.

    First Greeks make gyros from pork (neck) or chicken and i never saw anywhere they are mix it, they keep it separate and if someone want mixed then mix from two different gyros directly in pita bread. About spice this mix of spice i would say is combination of classic and add some things that are not usual but sound good and i am sure it taste very well, would add lemon juice what are missing from classic set of spice for gyros. Good point in this version of gyros is that he left meat to rest what is crucial for getting gyros well.

    a lot of people overdo it with the coals, Nick did not use many here at all and the gyro came up trumps. Thats experience.

    So do you raise the spit to cook for an hour, put it down low then cook for another hour and a half before beginning to slice, or cook for an hour in total before beginning to slice? And how long would you say it took all up to complete the cook? I’m doing one this weekend based on this epic video. Thanks!

    Last real gyro i ate was in 1979. Now i see they add french fries in the gyros in Greece. Not many authentic Greek restaurants where im at now. East coast Florida

    When I was a kid I always ate gyros at a local Greek restaurant. However, it was always 100% lamb meat. Has this changed over the years? Even when I lived in Germany, it wasn't lamb meat. The white cucumber sauce was an excellent balancer for the gamey taste of lamb!

      It's normally pork or chicken, at least in Greece, it used to be lamb as well in Greece but now few make it. In other countries, due to the Easter lamb spit roast custom in Greece, people may have connected Greek meat dishes with lamb, and Greek immigrant grill shop owners do what they can with what's popular or easier to find.
      That white cucumber sauce is called tzatziki (pronounced more like jah-jeeh-kee), and its key ingredients are Greek yogurt, garlic, cucumber and olive oil.

      We mix the meat with chicken thigh and lamb shoulder so as to reduce the strong lamb flavour, any meat goes. I found this to the best mix. The cucumber sauce is called tzatzaki, it's a greek yoghurt with garlic and shredded cucumber. Combined they taste fantastic.

      We use a serrated knife with small fine teeth, which cuts the meat easier. We tried an electric knife but this chews the meat. The hand knife has better control.

      This is a 9 inch aluminium pulley and I got it from a pulley store. You can do an internet search for pulley store near your area. I have videos on the spit itself please check them out.

      Thanks for watching, the gyros is placed on the spit on the top level of the spit for an hour and then brought down to the lowest level, the first cut is about an hour later to get the crust off. Cut every 15 to 20 mins after that.

      food poising does not occur from having 2 different raw meats its when one is contaminated and then touches the other 2 pieces of clean meat touching is fine especially just prior to cooking
