The Best Thai Duck Noodle Soup Recipe (Guay Tiew Ped) ก๋วยเตี๋ยวเป็ดตุ๋น | 10th Haven

  • This aromatic Thai duck noodle soup is a perfect way to start your weekend. The duck noodle soup has a very deep and bold flavor with a hint of homey spices. You can choose to use any type of noodle around the house but I recommend the traditional pho, egg noodle, or rice noodle with veggies to go with this soup. This time I decided to go with thin rice noodle and ‘Yu Choi’ - a Chinese vegetable. The ingredients list is a bit longer this time but I promise you it is very easy to make! No need to be intimidated. 🤗🤗
    One of the most important ingredients in most Thai duck noodle recipes (or any noodle recipe) is the garlic oil that can be prepared by frying garlic with pork fat (aka. Thai bacon in our house). I made this in advance (which will be posted in a separate video!) This simple condiment creates a unique flavor that will leave a pleasant taste in your mouth!

    Prep time - 10 mins
    Cook time - 2 hours 30 mins
    Makes about 10 servings (depend on how much meat you serve in each bowl)
    ▶ Ingredients
    2 tbsp canola oil
    1 tbsp coriander seeds
    1 tbsp black pepper
    1 cinnamon stick (~5 inches long)
    5 star anise
    12 dried shiitake mushroom
    10 g ginger
    1/4 cup cilantro stem
    1 garlic head
    1 onion
    4 tbsp dark soy sauce
    4 tbsp seasoning sauce
    4 tbsp light soy sauce
    4 tbsp oyster sauce
    1 tbsp salt
    1 chunk palm sugar
    1/4 cup white sugar
    13 cups water
    1 whole duck
    ▶To serve you will need
    3 greens onion
    1/2 cup garlic oil & crunchy Thai bacon
    Noodle of your choice
    Veggie of your choice

    This dish originally Chinese but it was adapted to several different method version in other countries. In Vietnam this dish is called "Mì Vịt Tiềm".

    Amazing soup! It’s become a staple dish in my house. We absolutely love it 😁 if you want to use the duck fat for making other dishes just trim its off and render it. Two dishes from one duck 🦆

      You will be suprise that duck fat is more healthy than other fat or oil used in cooking 😂I usually scoop up the fat on top of the soup and store it in a jar in a fridge and use it for cooking in replacement of oil

      I just looked it up and you're right - duck fat is nowhere as unhealthy as I thought it was. Not as good as olive oil it seems, but much better than butter.
      You learn something new all the time.

      I use Erawan brand rice vermicelli, you can use any brand should be the same just don’t over cook your noodle.

      Can use Thai Rice Vermilli (Bee Hoon), Mee Sua, Hor Fun (Kway Teow) or Wanton Egg Noodle

    Not a bad recipe, but the only issue is that water the duck cooked in will be so greasy - like an oil slick. Staining it in a fine mesh sieve and leaving it in a fridge overnight will allow all the fat to rise to the top, which you can then skim off and be left with a pure, fat free broth. A duck is a very fatty, greasy bird.

      I think that grease is the main difference between duck and chicken. Why not make chicken instead? (I personally like the soup exactly because it is not as dry as from a dry soup brought)

      Chicken and duck are two very different flavours. I like them both.
