    I think if we're going full molecular, it should be served with tomato foam and some italian herb "caviar" to have familiar flavors, but unexpected textures.

      It should bother you, why use exact measurements like you would assume you need in molecular gastronomy to dump haft the product? It's a travesty!

    couldn't you use sodium citrate to emulsify the entire mixture then add agar agar?

    I have a question: what's the range of maximum temperatures the water-randomingredient-agar agar mix can endure before it lose the spaghetti-like shape?

      agar agar is set in room temp and stays solid in warm temp
