Makes 10 servings
5 flour tortillas - 10-inch (25cm) each
10 oz (300g) cheese (Mozzarella or Cheddar) , grated
For the Beef
1 tbsp olive oil
1 (5 oz- 150g) medium onion , diced
3 cloves garlic
1 pound (500g) lean ground beef
1 tbsp (7g) smoked paprika
1 tsp (3g) chili powder
2 tsp (7g) ground cumin
1 tbsp (3g) thyme
1/3 cup (70g) tomato paste
1 tsp (5g) salt
freshly ground black pepper

I saw the video yesterday and made Beef Quesadillas today.
It tasted as great as it looked. I made a big salad with it....really good combination as a full meal dinner.
I have left over salad and beef, so we will eat the same dish tomorrow again.
Normally I don't eat much salad in the cold season but with the beef tortilla I truly enjoyed my salad.
I will do this combination now regularly.
