Hi Anne, I have a question as to when you use a piping consistency and flood vs. doing the whole thing with a 15 second icing. Seems like you can skip the piping step and making 2 consistencies of icing. So my question is is there a reason to do one verses the other or is it a personal preference?

The squeeze bottles are faster and easier and you can use a funnel. The openings are big in the larger bottles so I can just run my icing into it. Flow icing is the consistency of honey usually, so it will run in a stream.

How do you get the outline not to crack or “fall off” when it’s dries? I’m trying to pipe some volleyball lines on chocolate covered Oreos and some lines are falling off..😩😩😩

I’ve seen so many cookie decorators just use one tipless bag to out line and flood and it turns out just fine. Haniella’s channel comes to mind.. she never uses tips or bottles. Is it just your preference?
People use different consistencies so the other person may not be using as thin of a flow icing as she does above, for example. I sometimes use flow without an outline, like on tulips.
I use half sheets that I bought from Sam's club years ago. Since I bake with parchment, they still look brand new. I found that in a home oven, I needed to increase my baking temp to 375 (from 350). I hope this helps!
I use a large cookie sheet with no sides as it blocks the heat from getting to the cookie - so I'm told. I don't use any sheets with rims. I'll make focaccia in a rimmed sheet.
In her Bluprint class she said it could stay on the counter (sealed) for 2-4 days, in the refrigerator for a week, or in the freezer for I think 3 month or maybe more.
What???? She uses both. She uses the outline (in the piping bags) to outline the cookies and then uses the flooding (in the squeeze bottles) for the flooding.

I always use bottles...Lot easier and cleaner and better than the bags.

What size tip and squeeze bottle top are you using?
U should of done video on the tutorial of u put stuff in mixer and see how it should be running that be helpful

Your piping consistency is too tifft, just add a little more of water to it but not too much..

Actually it's more common to use the outline and then flood it. Using the flooding consistency is too wet and it will overflow over the sides.

Use the silver half sheets - not the ones with the dark coating which can overcook your cookies, and use a Silpat or parchment.

I put mine into a piping bag first and then squeeze the piping bag into a bottle

She used both -- she outlined with the bag and tip and filled it in with the big bottle of icing.

Good instruction but it was so BLURRY it hurt my eyes and I had to stop watching.
