How to Cook a Top Round Roast

- This top round roast is easy on the wallet and big on flavor thanks to a simple rub made with salt, pepper, orange zest, coriander and ginger. A little oil on the surface of the top round will help the rub stick during roasting. Preheat the oven to 450°F. Then just follow simple roasting instructions to reach your perfect doneness.

4 pounds Certified Angus Beef ® top round roast
1 tablespoon kosher or sea salt

Made this tonight.....super easy and the crust is so savory. I found the dried orange peel.
Mine was a bit under 3 lbs so after the 15 min sear, I cooked it for 60 mins.

I used different seasonings…onion powder, garlic powder rosemary, oregano, thyme. That first 15 minutes at 450 did great! My son loved it! It was a great Christmas!

This was outstanding! I didn't have the orange peel, but made the rub anyway without it and it was delicious. Went by your instructions and the instructions in the app you mentioned. Will definitely make it again as my whole family gobbled it up!

Whenever I do a top round I use a heavy enamel cast iron Dutch, I marinate my beef in a DIY vacuum pack with rosemary and red wine for a great bright red crust. (Use a big zip lock and slowly submerge your roast til the zip lines just above water and seal) I use hardy root vegetables like parsnip sweet potato carrots ect as a roasting rack. while resting the beef I get the oven on a higher heat with the top off and let the veg get caramelized and fried in the rosemary infused beef fat at the same time.
Sounds great but if you cook it in a Dutch Oven then you are no longer roasting it. Roasting exposed meat to circulating air currents.
Still delicious no doubt. But the beef is not Roasted.
Round has became part of my favorite cut of beef, it is huge, lean, clean of messy tough structure. Good for roasting.

Have used this method twice and got great results both times, I use a digital thermometer that has an app that you can set to notify you when you reach your target temp. I like mine rare\med rare so I pulled it out at 128, and after resting, it was pretty much right where I wanted it.

@@Appalachianasshole41 135 is the high end of med rare, which is what I target, and it hits if I pull it out at 128 unless it's a bigger roast
Great video. Plenty of guides on how to handle an expensive cut like rib, but a not on lot on the more economical cuts. Hope to see more top/bottom round, sirloin, flank recipes.

I just seared my roast and fixed it in the crockpot but I cooked it on high and then put it on low and it turned out tougher than a boot. And it was Certified Angus Brand Top Round Roast. We like our Roast done and fall apart tender not pink.

Excellent video and nice to see a humble cut featured so nicely. Here's a tip, do NOT tent your meat. It defeats the purpose of resting the meat and it will keep your meat "cooking" and sometimes make the meat a little sweaty. Longer rests on a piece of meat this size is also a good idea.

I generally use a bit smaller roast and cut the tapered ends off to use for a stir fry and have more even end result with the rest. I also turn the oven down to 225 after the sear until the internal temperature is 125 for a bit more tenderizing.

Top round makes a great jerky. Get about three times the amount that you would pay for at the store at the same price... plus you know exactly what went into the jerky and you can tailor it to your tasts.

Ugh I put it in the crock pot with broth on 4 hours it seems tough!

Top round is too lean for cooking in a crockpot,

One rule of thumb to follow is this :

Fatty meat in crockpot,
Lean meat in oven.
Fatty meat has lines of white fat between the meat which is great for slow cooking and pan frying,

Lean meat has almost no visible fat other than a large lump fat either on its side or top wich is usually cut off by the butcher,it is best used for stir-fry or oven.
Is it cheaper than an Eye round?
Typically eye of round will be cheaper but this will vary by location.
Great video but the Roast Perfect app needs some serious improvements, I tried to use the timer and there are many glitches, easier to just get the different times from the app and use a different timer. The times by the app worked perfect for me.

@@CertifiedAngusBeefTestKitchen I had the same problem. After the first timer (sear) was done, I couldn't get the second timer (roast) to start. I had to start over and skip the first timer. I thought all I would have to do was tap the right arrow to go to the next timer and then tap start. But nothing happened when I hit start. Same with going to the third (rest) step. It would also be nice if there was an audible sound when the timers were done.
Top round 4.5 mins
450 degrees- 15 mins ….then….
325 degrees- 70 min (medium rare)
4.5 lbs perhaps, not mins
What if I don't have a roasting pan?
Do you have a heavy duty cast iron skillet? You could also use that!

What kind of oil? Olive? Vegetable? Avacato? No one mentions what kind of oil to use.
Oils like Canola and vegetable are best for high heat

What happened to the fat cap? Every top round roast sold around here has a layer of fat on it. What did you do? Carve it off and discard? Also, how are you supposed to slice a roast that has the grain of the meat running in several different directions, not in just one, uniform one?

You said it should be cooked in at the end of 375 or 325 and then you put in the thermometer and said yup it’s done it’s 125 what did you mean by that
The oven temperature is turned down to 325 after the initial sear at 450. You then roast the meat until it hits 125 degrees internally.
You put the roast in at 450 for 15 minutes and then drop it down to 325 for the rest of the cooking time. Remove from oven when internal temp reaches 125 and then it rests on the cutting board (uncovered) for 20 minutes where it continues to cook to the best doneness.
The saw marks on the beef bother me. Says your knife is too dull
There must be something to were you cook your meat. 135 degrees in northern Ontario leaves me with near rare meat.
