    The 73-year-old chef has been frying Char Kway Teow for over 20 years, and friends in the Johor Jaya area are very familiar with him. The first time I visited, Uncle had to close his stall due to foot pain, so I missed out on trying it. On my second visit, I finally came at the right time.
    Despite enduring foot pain for more than two years, this Uncle still sets up his stall every day. He fries when there are orders, and when there are no orders, he sits and chats with customers. This Duck Egg Char Kway Teow, once famous in Batu, is something I finally had the chance to taste today.
    This dish is full of rich wok hei aroma. The high-heat frying brings out a charred fragrance, and the combination of the slight spiciness and duck eggs creates a unique and spicy flavor. It is also one of the most popular breakfast choices for people in Johor Jaya.
