SPECIAL CHICKEN PIE

Chicken pie
Makes 14 medium pies
Pie Dough:
* 500g all purpose flour/4 cups
* 250g butter (2 sticks + 2 tablespoons)
* 1½ teaspoon salt (8g)
* ½ cup water + 2 tablespoons
To boil chicken:
* 620g chicken (2 medium chicken breast)
* Small Onion
* 1/2 teaspoon salt
* 1 teaspoon chicken seasoning
* 1 cup water
*
To make the filling
* 2 tablespoons oil
* 1/4 cup chopped onion
* 1 teaspoon minced ginger
* 2 cloves garlic
* Shredded chicken
* 1 cup shredded cabbage
* 1/2 cup shredded carrot
* 1 chopped scotch bonnet pepper
* 2 tablespoons all purpose flour
* 1/2 cup water
* 1/2 cup chicken broth
* 1 teaspoon paprika
* 1/4 cup chopped green onion
Additional:
* extra flour for dusting
* 1 beaten whole egg for egg wash

Yum, yum… this cook obviously went to school cooking lessons with me in the 1970´s where all cooking was done by hand, ( we had biceps like Tyson from whisking and mixing.) I think think this recipe will go down great in Lancashire U.K. ( Where me and Tyson hail from!) I love pie xx

I made this pastry dough and it was awesome! So flaky at the centre and crispy at the edges.
