    Recipe Ingredients:
    1 large eggplant
    2 zucchini
    2 summer squash
    2 red bell peppers
    1 large yellow onion
    3 cloves garlic
    6 oz can tomato paste
    1 cup of water
    Fresh thyme
    Fresh parsley
    Olive oil (enough to saute all the veggies about ½ cup)

    Use fresh diced tomatoes or canned diced tomatoes instead of the tomato paste and this will turn out a lot better.

      EZGlutenFree I hope I didn't overstep my bounds, your recipe will make a delicious version also, but I believe you will like my suggestion. I also noticed your monicker infers gluten free foods. I don't care one way or the other but realize some people have legitimate, even serious problems with gluten. That said, all canned tomato products, including tomato paste are not neccesarily gluten free even though you might not realize it. Here is an ingredient list for tomato paste from a major manufacturer. "Tomato Puree (Tomato Paste, Water), High Fructose Corn Syrup, Salt, Dried Onions, Partially Hydrogenated Vegetable Oil (Soybean And/Or Cottonseed), Spices, Hydrolyzed Corn Gluten, Soy & Wheat Gluten Proteins, Grated Romano Cheese Made From Cow's Milk (Cultured Milk, Salt, Enzymes), Garlic, Citric Acid, Yeast, Soy Flour. Contains Soybeans, Wheat, Milk." Cheers and have a great day.

      Thanks Bill. Some people may not realize that some brands of tomato paste could contain gluten although they should not. That's why people with celiac disease are instructed by medical professionals to always read labels carefully every time. I've even had situations where products didn't have gluten one day then had gluten containing ingredients the next time.

      Ratatouille is my favorite vegetable dish and my preference is to use fresh Roma or cherry tomatoes cut in half. I prefer to roast my vegetables in the oven, though I have made it on the stove. It's the bomb! 🍅

    Thanks for sharing this recipe. I used half cup white wine and half cup of water and put into the oven in a casserole dish. What an explosion of flavour. Left over I used in egg omelette with cheese. OMG!

    What people don’t know is that that dish will get u running regular again. Was dropping hard dry rocks but that dish fixed it for a little while. ☺️

    Me and my girlfriend made this yesterday. We swapped out tomato paste for 3 chopped fresh tomatoes and a tin of chopped tomatoes, and didn't use squash because I'm not a fan. Once we had mixed everything together, we baked for 30 mins. It came out amazingly- we had it as a main and served with warm bread, was really filling, tasty and was gone within minuets. Will definitely be cooking again.

    Going to make this tomorrow. But I think instead of adding water to the tomato paste I will add veg stock, just give it a little more flavour. I was thinking of tinned chopped tomatoes instead but I am using veg stock in everything these days so why not here too? Maybe a little Rosemary. I have certain dietary needs that require me to prepare and cook all my meals, this will be a welcome addition to my repertoire. Thanks.

    Can you believe it I've never had Eggplant. I've been wanting to tell you that I found out I don't have Celiac! It may be Crohn's disease. I'm able to eat gluten again which was very weird. Just outta the blue I ate some one day and have never had a problem with it since. This is a lovely fresh summer dish Anne! I love it. I need to make this for my fam! TFS & TC :D

    Yes it is truly Beautiful Anne, you know I reckon you fry that on my car today, LOL. Should I try it? I suspect I might have and expensive paint job.

      EZGlutenFree LOLz Anne, the Heat in Florida would be a Cooling Experience, We are 117F.. Palm Springs California Anne :) And it's super dry. I bought a cover for the car but it just disintegrated :(

      All this time I thought you were in Palm Springs Florida which is usually about 10 degrees warmer than where I am. But we've been hitting the high 90's for days and florida seems to be 10 degrees cooler than us right now. It's all topsy turvy. If you are at 117 degrees I'd have to say you are at the gates of hell.

      EZGlutenFree But no Humidity Anne, It's now so bad and It has mostly been 106, dropping to about 94-98 at night.. Never under 106 in the Day. But it feels cooler as there is little Humidity, You'd love it, Pools Pools, everywhere :o)

    I recommend steaming the eggplant beforehand rather than sautée if you want less oil. It also holds together better.

      It's hard to say. It depends on the size of the servings. I'd guess this recipe made about 10 cups.

      Not at all. Each veggie has it's natural sugars developed in the pan and the tomato paste has a natural sweetness. It's definitely not a sour sauce.
