This is an interesting idea! Thank you.
I had felt this would be a good idea because there is financial and transportation issues in many western countries right now. Plus, people are getting sick from wheat. But rice is the alternative to wheat and rice only grows in about 3% of the most wet land. If you have transportation and supply chain issues, and need an alternative to wheat, then rice is out. That means... looking for something besides wheat and rice.
Pumpkins grow very well in many areas! So does squash. But I think pumpkins actually have a better taste than squash in many cases.
BTW, have you tried making french fries with pumpkin stuff? Its actually pretty good.
    ...
Anyway, the idea of flour or a flour like powder made from squash and pumpkins is a good idea.

      G'day Diana.
I prefer to hydrate it first, as I then know what I am dealing with in regards to how much liquid it takes to make it useful.
It gives me a better idea on how wet or dry my mix will be when it is combined.
      Hope that makes sense Diana.
Thanks very much and I hope all is well,
      Daz.

Can I do it without the dehydrator and liquidizer?

      G'day Dawn.
      Yes, indeed.
Dehydrating in a low temp oven is possible. It's how I did it as a chef back in the day, as we did not have dehydrators.
Grinding might be a bit of a challenge. A mortar and pestle is my first thought, but that would be hard, with these flat, dry pieces.
If you have access to one, people use coffee grinders.
I hope this helps you in some way dawn and sorry for the slow reply.
      All the best,
      Daz.

What do we do if we don't have a dehydrator? :(

      G'day.
You can use an oven to dehydrate and I recommend looking up how to go about that as it is very easy to do.
Good luck and all the best,
      Daz.

      G'day Colleen.
I am so sorry for not including that information. I had not realized until now.
It would have been 180c, which is 356f and I would have watched them to make sure they did not go too dark.
Thanks so much for watching Colleen and please feel free to get in touch again.
      All the best.
