GIGI HADID’S SPICY VODKA PASTA

Makes 2
Ingredients:
¼ cup olive oil
1 small clove of garlic, diced
¼ green onion
¼ cup tomato paste
½ cup heavy cream
1 tablespoon vodka
1 teaspoon red pepper flakes
225 grams of shells pasta
1 tablespoon butter
¼ cup parmesan cheese
Basil, chopped, to serve
Salt and pepper to taste
Method:
In a large saucepan, heat the olive oil, garlic and onion. Cook until soft. Add tomato paste and cook until it appears “darker [in colour] / a bit caramelised”, says Hadid.
Add in the heavy cream. Add in the vodka and cook through until evaporated.
Add in the red pepper flakes. [There is a special note from the chef here to add in more flakes if you like your pasta extra spicy].
Keep stirring until combined. Season with salt and pepper. Remove sauce from the heat.
Cook pasta separately. The chef uses shells but Orecchiette would also work well. When the pasta is done, save ¼ of the pasta water before draining.
Add in the butter. Stir over a medium heat til the butter has melted and the sauce is “sauccyyyy”
Add pasta - and the pasta water - to the sauce. Add parmesan cheese and stir. Add more salt and pepper to taste.
Top with a sprinkling of parmesan cheese and basil to serve.

MINE: Spicy Chicken Rigatoni Ala Vodka
8 oz rigatoni pasta, cooked and drained
1/2 cup pasta water
2 tbps olive oil
2 chicken thighs, cut up into small pieces
4-5 garlic cloves, minced
1/2 a shallot, minced
1/2 cup mushrooms, sliced
2 tbps sun dried tomatoes, sliced
1/4 cup tomato paste
2 tablespoons vodka
1/4 cup heavy cream
1/2 cup whole milk
1/4 cup parmesan cheese
1 cup spinach
salt and pepper to taste
pepper flakes (optional)
In a pan on medium high, add a drizzle of olive oil and cook the chicken on each side for 4-5 minutes until cooked through. Remove and transfer to a plate.
Add 2 tablespoons of olive oil and shallots. Cooked until golden brown and then add the garlic. Cook for a minute then add mushrooms and sun dried tomatoes.
After a minute or so, add the tomato paste and let it caramelize a bit, turning a darkish red color. Add a sprinkle of pepper flakes, the vodka and stir .
Now add the cream and milk and stir some more until it becomes a nice saucy sauce.
Add the cooked rigatoni and chicken back in and simmer for a few minutes to heat through.
Add the spinach, parmesan, salt and pepper, mix well and serve. Enjoy!

Brooo! I just made this and it was freaking BOOOOMB!!! I didn't have the vodka or mushrooms, but I had everything else, and I replaced the vodka with red wine, and it was delicious!
I make mine the exact same way as you did lol....minus the mushrooms;) I agree with you that the chicken tastes SO good mixed in! So much better then just pasta and sauce..

If you heat your pan a couple of minutes before adding oil it keeps meat from sticking. Neat trick
I think the extra cream is needed if using tomato paste as it's concentrated tomato flavor than tomato sauce. So I think the version you came up with could use that extra cream, for sure. But your version is definitely more complete and less mac & cheese looking than hers. :)

Pasta actually has protein in it. It is listed in the nutrition information part of the box. I would’ve also just used 2 T oil, 1/4 cup sounds like way too much. Remember, Gigi is a model, not a chef, so her recipe may not be how you expect vodka sauce to taste. I have made several versions of vodka sauce (Rachael Ray, Nigella Lawson) and I always think they use too much vodka. It is only there for flavor and the alcohol is going to cook off so I wouldn’t use that much. I thought one of the recipes had way too strong an alcohol taste. When you cook it, it gets stronger in taste. I would also use a different pasta - either tortiglioni, tortilla, or anything with a ridge in it.

I think that Gigi used the correct measuring cups - you were using measuring cups for solid ingredients, not liquid ingredients, I would’ve used a Pyrex measuring cup.

not gonna lie i dont really like it when the food community takes someone's recipe and says they're making it better. kinda feels disrespectful to the person that made the recipe in the first place... like if someone did that to a recipe that i made, i'd feel discouraged or not very happy about it. just food for thought. its different when it's a fast food place or something though.

This is... really biased. In Gigi's recipe, you didn't use tomato paste (which makes a big difference) and skipped out on the vodka because she was pregnant, but the original recipe has vodka. In your recipe, you somehow acquired tomato paste and added the vodka, so idk, stay consistent maybe. If you're going to choose to make the recipe with substitutions, you should have the same in your recipe. They both look good though.

Yes, but in your version, you used vodka and tomato paste, which is her original recipe. I was just saying that you could have made it without vodka and used the substitution of tomato sauce in your version to keep it consistent.
