It looks like the curves, though you are drawing them freehand, turn into a Bezier-type path once completed. Can you then adjust the handles afterward to smooth out the curve, or move the control points further?
Not yet, but it is on the roadmap for future updates.

Undo does not work while setting up the mesh in this version. In version 3 this wont be an issue.
