Make Vinaigrette Like a Pro!

- Think it's hard to make vinaigrette? It's really not. This is my favorite lemon vinaigrette, and it couldn't be easier!
Combine 1/4 cup freshly squeezed lemon juice, 1/2 cup good olive oil, 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper in a small glass measuring cup and whisk until combined.

This is exactly how my landlady in Germany made it. So easy, so delicious. Great on potato salad!
In a measuring cup large enough to mix in,
- Start with 1/4 cup of squeezed lemon juice
- 1/2 cup of quality olive oil (looks like it may have been a cup)
- Teaspoon of kosher salt
- 1/2 teaspoon pepper
And whisk to combine..
Pro Tip: put dressing on bottom of salad bowl, make salad, and toss just before serving.

I know very well that was not 1/2 a cup lol I recommend to add a little Dijon mustard and it makes it all come together nicely without separating

I do this recipe all the time. I don't think I put that much olive oil though.
I did it with a bunch of yummy mixed lettuce, sweetened chopped pecans, blueberries, purple onion sliced thinly, shredded carrot, and fresh chicken breast from Wednesday's roasted chicken. Superb and light! Best ever! Thank you for the perfect easy, peasy dressing😅
I like to zest the lemon into the salad as well. And I put my shaved button mushrooms in the dressing before I mix the salad, the mushrooms get marinated before service.

if you slowly drizzle the olive oil from about a foot high while you’re whisking, you’ll actually emulsify the dressing

You know that's a great question im wondering that myself ? Goya so far is one I like, the darker olive oils I don't care for the taste, so I try to find the lightest colored one.... But yikes the prices are so for real
Usually any sinlge origin, extra virgin olive oil will be really good.

Should add salt to the lemon juice before the olive oil. It changes the molecular bonds that allow for it to incorporate into the oil better.

So 1 step we do here is we make it same as you did BUT we add a tiny bit of sugar or honey.
When you use a 2 cup measuring cup, and say to add a half cup olive oil, then proceed to add 1 to 1 1/4 cup oil. Then to use a tablespoon of salt, while saying to use a teaspoon of salt.
Try using the amounts you say.
you need mustard or something as an emulsifier. that's gonna separate

I'm guessing that the measured amount of lemon juice is 1/4 cup. Generally, a two to one mixture. She doesn't say how much.

Vinegar is the acid. Lemon also serves as the acidic element. Its the same type of salad dressing. Relax.

Seems like A LOT of oil-I’d think it’d be kinda greasy.
Use a scale. Weigh ingredients in grams. Recipes can be reproduced precisely. Also improvements to recipes are easy. i.e.: Want 15% more garlic in recipe? Next time put 1.15g instead of 1g. A little less salt 0.9g instead of 1g. Keep tweaking your recipe till it's dialed into perfection .Measuring by volume is for amateurs.
