This is how I make my soft BANKU - Fante style Etew - step by step guide

  • Ghana etew, Fante style banku, softest ever (made with fermented corn dough only, minus cassava dough). Will never harden over time, as per usual etew character 🤗! Simple technique I used will demonstrate how to achieve the softest banku/etew ever!
    Fermented corn dough recipe:
    Measure equal amounts white corn meal, and yellow corn meal. Add enough pater to form a dough. Mix well to ensure there are no dry spots. Cover top of Dough with a cling film and leave at room temperature to ferment over 7-10 days. Then portion into ziplock bags, label with date made, contents, and store in the freezer.

    * 800 g or 4 cups fermented corn dough
    * 1000 ml water + extra for steaming and softening

    Maame Fante woama me k)n ad) etew yi. Growing up, one of the very few street foods that came into our house was etew from a Fante lady in Obuasi central. I can never forget the taste and aroma of her etew. It has some smokiness to it. Oh so good! Thank you onuawaa 😘😘😘

    Etew! The bane of my childhood. My dad loved it as much as I hated it. He ate it with a fork and knife, typical fante man. I always wished it would be softer but my loyal mum would not desecrate her recipe with cassava dough, 'twas taboo. Thanks for sharing. I'll send her the link.

    Growing up, we used to make etew at home and for a long time I didn’t even know it was a Fante dish, I thought my folks were avoiding cassava dough. Yes it use to harden over time but this really looks soft and nice. The texture looks just perfect.

I did hear banku was quite hard I guess that's why I never tried it before but seeing this soft version from my one and only International award winning chef.....I am definitely going to give this a try one fine day when I get my hands on some corn dough.
