  • I was badly missing the Romansia Mandi we used to have from Riyadh. Not exactly the same taste, but a similar mandi does have a recipe video in this channel which was made in oven. This time prepared on the stove top with slight changes in the ingredients. You make make this exact the same way using the recipe from other Saudi mandi. This turned again again amazing. And a lot more dishes prepared when my uncle came home for dinner.

    Mutton harees
    Cooking mutton :
    Mutton - 1 kg
    Whole black pepper- 1 tbsp
    Cardamon - 5
    Cloves - 5
    Cinnamon stick - 1” piece
    Cumin seeds - 1 tbsp
    Water - 4-5 cups salt
    Cooking Harees :
    Split whole wheat - 2 cups
    Moong dal - 1/2 cup
    White rice - 3/4 cup
    Ghee - 3 - 4 tbsp
    Oil - 2-3 tbsp
    Onion - 1 large sliced
    Mutton stock & water - total 10 cups
    Salt
    Fried onion, cashews and raisins- for garnish

    Chicken mandi
    Spice powder :
    Cardamon - 5
    Cloves - 3-4
    Cumin seeds - 1 tbsp
    Coriander seeds - 1 tbsp
    Whole black pepper - 1 tbsp
    Chicken marinade :
    Chicken - 2 kg cut in half
    Turmeric powder - 3/4 tsp
    Spice powder
    Salt
    Olive oil - 3-4 tbsp
    Mandi :
    Olive oil / sunflower oil - 1/2 cup
    Onion - 1 large siced
    Capsicum - 1 small sliced
    Dried lemon - 2
    Green chillies - 3 - 4
    Basmati rice - 4 cups
    Water - 6cups ( for every one cup rice, use 1 & half water )
    Salt

    Hummus :
    Chick peas - 1 cup
    Tahini paste - 1/2 cup
    Garlic - 4 - 5 cloves
    Olive oil - 1/4 cup
    Lemon juice - 2-3 tbsp

    Tabouleh
    Burgul / wheat rava - 1/4 cup
    Parsley- a big bunch or 2 cups chopped
    Cucumber - 2 chopped
    Mint leaves - a handful chopped
    Olives - 4-5 sliced
    Tomato - 1 deseeded and chopped
    Lemon juice - 2 tbsp
    Salt
    Olive oil - 4 tbsp

    Kunafa dough - 500 gm
    Mozarella cheese - 250 gm
    Fresh cream - 1 cup
    Condensed milk - 2 tbsp
    Sugar syrup
    Sugar - 1 cup
    Water - 1 cup

    Warm Orange custard milk
    Milk - 3 cups
    Water - 3 cups
    Custard powder - 1.5 tbsp
    Sugar - as per needed
    Orange zest - of one orange
