Sweet tea brined pork chop
Brine is:
4 cups water
1/4 cup sugar
3 tbsp salt
1 tbsp molasses
1 bay leaf
pinch black pepper
4 black tea bags
Bring all that to a boil, cool, and then use to brine ~1.5-2lbs pork chops. We sous vide for a couple hours, season as preferred (salt & pepper, BFF, BBQ rub, etc.), and finish on the flat top, but grilling over charcoal is amazing as well! Pairs great with roasted sweet potatoes and cinnamon apples.
This was my dad's sunday morning specialty back in the 60s. Simple dish good memories, thanks 👍🍻
I’ve made these with Canadian bacon and Swiss cheese, served over a bed of hash browns. I don’t think you could go wrong whatever meat you use. I’m a little hungry right now.
In Canada we just have regular bacon.

March recipe: Bierocks
1. Preheat oven or air fryer to 375
2. Make a bread dough
3. Cook the filling in a pan all together(ground beef, shredded cabbage or Sauerkraut, Cheddar cheese, B.F.F., Chopped onion)
4. Make small dough balls
5. Put mixture in the dough to make a pocket of filling inside.
6. Bake until golden brown

You should really make some jerky…here’s a decent recipe.
Basic(ish) Jerky
Approximately 3-5# lean meat. Venison or beef trimmed of excess fat. 1/4 slices against the grain. Put in freezer for a bit to make cutting easier.
1/4 cup soy sauce
1/4 cup wash-your-sister sauce.
3/4 cup of beer or Dr. Pepper (I use IPA)
2 tsp garlic powder
2 tsb onion powder
1 Tbsp red pepper flakes
1-2 Tbsp coarse black pepper
1 Tbsp cayenne pepper
3 Tbsp honey
All ingredients can be adjusted to your liking, it’s just jerky!
Mix all ingredients and meat in a large mixing bowl with your hands, gloves optional if you’re afraid.
Put in 1 gallon ziplock over night in refrigerator.
Lay on paper towels and dry excess moisture.
Here’s the secret…cold smoke 1-2 hours on your grill or smoker. Easiest way is to use a pellet tube rather than using the actual grill. Try and keep the smoking tube as far away as you can to keep the temp of the meat down.
Then finish in a standard dehydrator until it’s to the dryness of your liking.
Note: cutting semi frozen meat would be much easier with a Sam The Cooking Guy knife! (Hint hint)

March: Orange Chicken. Use Sam's mom lemon chicken recipe but replace the frozen lemon concentrate with pulp free frozen orange juice. Add large chunks of white onion, red and yellow bell peppers, and pineapple chunks with the liquid under the chicken before you put it in the oven. Bake until the chicken reaches 165. Serve with white rice. My family loves this.

2 green peppers sliced thin
1 large inion sliced thin
2 small italian hot sausage links uncased
provolone cheese
hoagie rolls
fry peppers and onion till soft and set aside. crumble sausage and fry till done.
add pepper and onions back in pan and mix together scramble eggs and add to
mix cook till desired doneness on eggs. hollow out hoagie rolls and put in provolone cheese then egg mix. s&p as needed.

We make these all the time. Pro-tip: Flip the muffin pan over, wrap bacon around each one, par-bake till firm. Remove bacon cups, flip pan back over, add bacon egg chz green onions seasoning. Bake till desired doneness. Serve with hollandaise, hot sauce and toast

When bologna puffs up like that, I pierce it to make sure it fries evenly on both sides.
March ; bacon wrapped deep fried pickle.
Ingredients
Pickle spears
Bacon
Pancake mix
Wrap each pickle spears in a piece of thin sliced bacon, using a toothpick at each end.
Mix up some pancake batter, I use the store bought stuff.
Drop each pickle spears in the batter to fully coat each one.
Cook in 350 to 400 degree oil for 5 to 7 minutes and enjoy. Watch out for the toothpicks sparky.
I grew up eating fried baloney sandwiches. We used to buy the big log of baloney and slice it ourselves, so instead of thin slices from a package, we had thicker slices. My dad would fry baloney with eggs and home fries So good I still make that once in a while

Instead of allowing it to cup, we always made short (1") cuts 5-6 times around it. That's if you want it at least semi-flat.

Halushki - A quick Pennsylvania Dutch Coal Region noodle dish
1 head cabbage
1 package wide noodles
Onions to taste (about 1 large)
Butter (about 1 stick)
Salt and pepper
Cook wide noodles and drain. Cut up cabbage, onions, add butter (and a little water if necessary). Cook until cabbage is done, making sure no water remains (5 to 10 minutes). Pour cabbage and onions over noodles and mix well. Add salt and pepper. Enjoy.

Creamy garlic chicken
Easy and easily the best creamy garlic chicken you could have!!
▢ 2 large boneless skinless chicken breasts
▢ Salt & pepper to taste
▢ Flour for dredging
▢ 1 tablespoon olive oil
▢ 2 tablespoons butter divided
▢ 1 whole head garlic cloves peeled
▢ 1/2 cup chicken broth or stock
▢ 1/2 teaspoon lemon juice
▢ 1/4 teaspoon garlic powder
▢ 1 cup heavy/whipping cream
▢ Parsley chopped (optional)
Instructions:
Cut the chicken in half lengthwise so you have 4 smaller cutlets. Generously season them with salt & pepper and coat them in the flour.
Add the olive oil and 1 tbsp of the butter to a skillet (I use cast iron) over medium-high heat. Once the pan is hot, sauté the chicken for 4-5 minutes/side or until it’s nice and golden. Take the chicken out of the pan and set it aside.
Reduce the heat to medium (or even med-low if using cast iron), and add the rest of the butter to the pan. Let it melt and then add the garlic cloves. Cook them for 3-4 minutes, stirring often, until they’re lightly browned on the outside.
Add the chicken broth, lemon juice, and garlic powder to the pan. Let it bubble for around 4 minutes or until the liquid is noticeably reduced.
Stir in the cream and add the chicken back into the pan. Let it cook for another 5 minutes or so, until the sauce is reduced and the chicken is cooked through. Serve with freshly chopped parsley if you wish.

1 Baked potato
1-2 slices of Swiss cheese
Butter
Salt & pepper
2-3 Eggs
Cook baked potato & slice open add
Butter, Salt & pepper to taste
add a few slices of Swiss cheese and top with two or three fried eggs over easy.
That simple & so delicious! We love having them for breakfast.
Thank you so much Sam for this idea. I did not have any bologna. However, I use thin cut lunchmeat ham (no need to pre cook ham). I put the ham in the cup, added a small amount of chipotle sauce, then the egg, then cheese, then cilantro and green onions, salt and pepper. These turned out amazing my kids love them so much you can do with a muffin cup tray. You rock Sam!

Grammie's Cowboy Candy (Note: do not call her grandma, or grandmother, she will come back from the dead for you, she was very particular)
Ingredients:
3 pounds fresh, firm jalapeno peppers, washed
2 cups cider vinegar
6 cups Granulated white sugar
1/2 tsp turmeric
1/2 tsp Celery seed
3 tsp granulated garlic
1 tsp ground cayenne pepper
Directions:
Wearing gloves, slice the stems off the jalapenos, discard the stems. Slice peppers into 1/8-1/4 inch rounds and set aside.
In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic, and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes. Add pepper slices and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers into clean, sterile jars to within 1/4 inch of upper rim of the jar. Turn the heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger tightness.
* If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars. It's wonderful brushed on meat on the grill or added to potato salad (i.e don't toss it out)
Place jars in canner and cover with water by 2 inches. Bring the water to a full rolling boil, then let simmer for 10 min for half-pint and 15 min for pints. When time is up use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed for 24 hrs. When fully cooled wipe them clean with a damp cloth and label.
Best if allowed to mellow for 2 weeks to a month before eating. Though the recipe also notes they are equally tasty in less time.

March Recipe:
PINWHEELS
Pizza dough
1 tub flavored cream cheese, I used onion & chive
precooked chicken, or steak
1 cup shredded cheese of your choice
1 Teaspoon BFF
Preheat oven to 400 degrees. Put parchment paper on a baking pan. Roll out dough spread cream over dough, arrange chicken, shrimp or steak and cheese and sprinkle BFF on top. Roll up and slice and place pieces on baking sheet and bake for 15-20 minutes until brown. I serve with a garlic ranch
The olive loaf bologna is the way to go here. Maybe even cotto salami for the pepper addicted folks like myself.
I like the idea of trying this with ham.

March: make a Porchetta, that is a pork shoulder inside a rolled pork belly, with no bones. Or a special cut of the pork belly that includes the pork shoulder still attached with no bones.
Season with salt, pepper, dried rosemary, and lemon zest. Cook in the oven at 300f until done, and then at 500f until the pork skin has crisped up. When serving, attempt to cut it kind of thin, and then chop up any of the pork cracklings.
Put it in a toasted Italian seasoned focaccia or ciabatta roll, with green salsa Verde.
Green salsa Verde is like red salsa, but made with tomatillo instead of tomato.
Dip the sandwich into some yellow mustard when eating.
Wow, so simple, but looks so good. Definitely going to try these.

5:07 - Green Eggs and Sam! 😂😂😂
I know this is a very simple dip, but we love it. Especially in the morning over toast or eggs, it’s delicious. Dad’s HOT dip: 1. Warm 2 lb Velveta in a microwave. 2. Add the following, all at once, to the melted cheese: 1 medium diced white onion, an entire can of medium Rotels (juice and all), a can of green chili’s and as much pickled diced jalapenos as you want. ( I like it spicy so I usually add a quarter cup of peppers) 3. Continue to heat the mixture until hot. It’s good hot, but it’s way better when reheated the next morning and served over toast and eggs. That’s it! Enjoy your video!

We do this almost exactly but with thin sliced pork roll (Taylor Ham), everything bagel seasoning add some hot sauce or hot honey and it's yum for the tum time.
At 5:18 it looks like there is a little something bright green on the tops of the egg cups! Now I want to make these but add green onions or some sweet peppers on top! Yummy 😋
I will try again....MARCH: ANOTHER VIEWER MADE IT AND LOVED IT!!!! Mom's pepper steak, simple and delicious!!! Cut choice of meat into bite sized strips ( we use sirloin ) cut green pepper into long slices ( top to bottom ) put meat and pepper into skillet with a little oil and fry until browned and softened with a good hit of BFF. Have a pot with cream of mushroom soup and only half a can of water ( so its thicker ) heated up and dump everything in the skillet into the soup. Meat, peppers and grease. Simmer for 15-20 minutes and server over Uncle Bucks Long grain wild rice.....AWSOME!!!! Defiantly legit!!!!
Sticking with the depression theme, how about "City Chicken" made in the coal region of Pennsylvania when Chicken was scarce during the depression. Alternating the meat on a stick gave the look of Chicken:
Veal and pork cubes. You alternate them on the stick/skewer. Then dip in egg then bread crumbs and fry to brown. Then arrange in roaster with lid. Bake 350 for 45 minutes

Balkan Burek for March viewers
Hope you don’t miss out on this one! Might look like a lot but it is simpler than it looks. Balkan burek is one of my families favorite things to eat and this will forsure be worth it.
Burek dough:
* 500g all-purpose flour (3.5 cups)
* 1 teaspoon of salt
* 300-350mls lukewarm water (1 1/4 - 1 1/2 cups)
* Vegetable oil
Burek Cheese Filling:
* 150 g cottage cheese (2/3 cup)
* 100 g crumbled feta cheese (2/3 cup)
* 1 large beaten egg
Meat And Potato Filling:
* 1 tablespoon of olive oil
* 1 medium, diced onion
* 300 g lean beef mince (10 oz)
* 1 potato, boiled cut into small cubes
* 2 grated garlic cloves
* Half teaspoon chopped rosemary, fresh is best
* Half tablespoon smoked paprika
* Half tablespoon salt
How To Make Burek Dough:
* Take a large bowl and combine the flour and the salt
* Add the water bit by bit, mixing until the mixture forms a dough
* Knead the dough for around five minutes, until it turns quite stretchy
* Split the dough mixture into batches of four and press down to flatten
* You need to find a bowl or a pan which is large enough to hold the dough when it is piled up on top of each other
* Add a little bit of vegetable oil to the pan or bowl and put the first flattened piece of dough inside
* Add a bit more oil (not too much), and add another piece of dough - repeat until you’ve done the same with all four pieces
* Add more vegetable oil on top of the last piece and place to one side to rest
* Preheat your oven to around 200°C (390°F)
* Add a little vegetable oil over your work surface (a table is best) - just a little!
* Remove one piece of dough from the bowl and remove the excess oil
* Flatten the piece of dough until it reaches a thickness of no more than around half a centimeter
* Handle the dough and stretch it outwards, over and over, so that you pull it to around 1 meter in diameter - you might end up with a few holes but don’t worry about it too much. By the end, you should be able to see through the dough
* Take one side of the dough disc and fold it over, towards the center
* Repeat this process until you have a shape that resembles a pentagon
* Repeat with the second piece of dough
* Add your filling (see below for the filling instructions) to the dough piece
* Add the first piece of stretched dough into the middle of the second one, and cut away the thick edge of the second piece - you can throw this away, you won’t need it
* Fold over the edges of the dough, so that you get a pentagon shape once more, and put it into a baking pan or tray
* Put the pan in the oven and bake for around half an hour, until it is a golden color
* Remove from the oven and let it cool down
* Cut into 12 pieces
* Repeat the process with the rest of the dough
* Bake until the pastry turns golden, and serve while warm!
For The Cheese Filling:
* Take a mixing bowl and add in both kinds of cheese, combining together
* Add the egg and combine once more
For The Meat & Potato Filling:
* Take a large pan and heat up the oil over a medium heat
* Add the onion and cook until soft
* Now, add the mince and cook for around 2 minutes, stirring regularly
* Now, add the potato, the rosemary, the garlic, and the paprika, and stir to combine
* Add the salt and continue to cook, ensuring the beef mince is cooked through
* Once cooked, drain the beef with a sieve to get rid of any excess oil and press down to dry it out

The ultimate jersey breakfast sandwich...
-2 pieces of french toast made with thick brioche bread
- a few slices of fried porkroll (real taylor brand porkroll from trenton nj)
- a Fried egg seasoned properly
- a slice or two of american cheese
- a nice chunk of hash brown
Build all of this into a sandwich and coat the insides with a healthy amount of fresh hollandaise sauce. Its a mouthful but the mux of flavors are unreal!

Another great one is Dinosaur Eggs. Bake large potatoes until nearly done, cut off about 1/3 of the potato, (save for potato wedges or something), scoop out a few spoonfuls of potato to make a little hole. Add some chopped cooked bacon, then drop in an egg. Add cheese if you want, bake until eggs are set. Serve with butter and hot sauce
The best balonie and eggs breakfest on the farm as a kid 60 yrs ago, and I still love fried balonie to this day.
March: Crawfish Étouffée
1 stick butter
1/4-1/2 cup set rising flour
1 medium onion (white or yellow)
1 clove garlic
1 can chicken broth (14.5 oz)
Seasoning: salt, pepper, Tony’s
1lb crawfish tails
Over medium heat: melt butter. Add flour and constantly stir to make medium brown roux. Add onion and garlic and cook until tender. Add crawfish, stir, and add chicken broth and seasoning (to taste). Add as much chicken broth or water as needed to reach your desired consistency. Bring to a boil then simmer on low for 20 minutes. Serve over rice.
March: Bell Pepper Soup
1lb ground beef
2 bell peppers diced 1/2 inch
Small yellow onion diced
Bundle of parsley chopped
30 Oz +/- diced tomato
15oz tomato sauce
32oz beef broth
Italian herbs
Garlic
S&P
Pinch of cumin
Splash of Cholula
Brown the beef. Remove from pot.
Sautee veg in beef fat
Add beef back along with tomato and broth
Simmer 1hr
Serve over rice
March:
This is a recipe from my childhood. This makes a HUGE amount of chicken, and was always part of a church or fire department fundraiser. So much so, I call it...
Firehouse Chicken:
3 ounces of Malt Vinegar
Add enough white vinegar to make one full cup.
3 more cups of white vinegar
1/2 Tablespoon of xanthan gum
Add all these to a blender and blend (what else would you do in a blender?)
Then add the following:
3 tablespoons of Salt
3 tablespoons of Poultry Seasoning
1 1/2 tablespoons of black pepper
1 tablespoon of garlic and blend again.
Add all this to about three full size chickens, broken down and marinate, overnight.
Grill to perfection and enjoy!
I do occasionally vary from this recipe a little. For example, I will add in some chipoltle peppers in adobo, onion powder, cumin and oregano to make a more Mexican flavor.
Or add in more garlic, ginger, soy sauce, oyster sauce, sesame oil for a more Asian inspired flavor.
This feeds a crowd!
Late 60’s early 70’s, when my mom worked swing shift, dad made fried baloney with peanut butter on toast. Best dinner ever!

Stuffed back strap
*Elk is preferred, any back strap will do*
Ingredients:
1. Roughly 1ft of back strap
2. 8oz Cream cheese
3. One large lime
4. One cup finely chopped mushrooms of your choice
5. 1/2 cup chopped cilantro
6. One full package of bacon
7. Salt and pepper to taste
Recipe:
1. In a large bowl, mix together cream cheese, chopped mushroom, chopped cilantro, and a large squeeze of lime (to your liking).
2. Lay out bacon vertically, side by side like a bacon blanket.
3. Butterfly back strap, lightly season inside with salt and pepper.
4. Lay back strap onto bacon (perpendicular to how the bacon is laying)
5. Fill inside of back strap with cream cheese mixture and close. Wrap bacon around entire back strap, and secure with as many tooth picks as needed.
6. On a charcoal grill, cook wrapped back strap until bacon is crispy and internal temp is 125 (or to your desired doneness).
7. Slice into medallions & serve.
March: Paleo Baked Eggs in Avocado
- 2 small eggs
- 1 avocado halved and pitted
- 2 teaspoons of fresh chopped chives
- 1 pinch of dried parsley
- Salt and pepper to taste
- 2 slices of cooked bacon crumbled
Preheat oven to 425 degrees. Place avocado halves in baking dish resting them on the edge to prevent tipping. Crack eggs into each half avocado (you may need to scoop out some avocado prior depending on the size of your eggs). Sprinkle each with chives, parsley, salt and pepper. Bake in preheated oven for 15-20 minutes, or until the whites have set and the yolk is still runny. Sprinkle bacon on top and enjoy!
MARCH: Smoked queso! I know, there's a million of these out there, but everyone who's had this one has loved it. Worth a shot!
Velveeta brick
Cream cheese brick
Handful of shredded cheese (whatever you've got)
Jar of fire roasted peppers
Small jar of ol del paso jalapeños
Small yellow onion
Crushed tomatoes in chilli seasoning with liquid
Ground beef made with taco seasoning (like for white people taco night)
Can of evaporated milk
1 tsp of: cumin, chilli smoked paprika, oregano, salt
Smoke in smoker at 250-300 from the start, mix as you go. Once all melted and together, smoke another hour and good to go.
I've made this with prosciutto instead of bologna. This looks good. Gonna give it a try.

March: Make this: Sam, my family has been making this breakfast casserole every Christmas and New Year's since the 1950s! And the beauty is that it can be made and enjoyed any time of year.
Christmas Breakfast Casserole
Ingredients:
1 lb. breakfast sausage browned
1 3/4 cup milk
4 slices of white bread (high quality preferred)
1/4 tsp ground black pepper
1/4 tsp dry mustard
4 eggs
1/4 lb. grated cheddar cheese (sharp cheddar preferred, must be hand shredded)
1/2 tsp kosher salt
Dash of Worcestershire sauce
Method:
Grease a square casserole dish (for 4). Use a 9 X 12 for 8.
Layer
• Cubed bread
• Browned sausage
• Cheese
Beat milk, egg, salt, pepper, mustard, and Worcestershire sauce.
• Pour mixture over bread, sausage, and cheese.
Refrigerate at least over night.
Bake covered 50 minutes at 350 degrees (until bubbly)
Optional:
1/2 tsp red pepper flakes for heat
Hot Italian sausage (casings removed) or chorizo can be substituted
5 minutes under broiler at 250 to crisp up cheese
March: Buffalo Chicken Mozzarella sticks
Combine in mixing bowl
1 rotisserie chicken
1 block cream cheese
1/2 bottle of Frank’s red hot
2 cups shredded cheddar
1 cup red onions
1 cup chopped celery
1 cup blue cheese crumbles
Place in baking dish
Bake at 350 around 20 min
Let cool then freeze
Pull out and let soften slightly so it doesn’t crack when cutting into rectangles
Double bread with flour, egg wash and Italian bread crumbs
Fry at 350 till golden brown
Man, as soon as you started this recipe I thought about making a “nest” with hash brown potatoes, like a nest! Yum

Chili Browns!
Buy store bought hash browns or make your own.. cook until golden brown
Buy or make your favorite chili, with or without beans...mild or hot
Grate some cheddar cheese... or any cheese you like
Put down the hash browns
Cover with chili and cheese (onions optional)
Broil to melt cheese
Eat!

Made it with bacon, because I didn't have any baloney in the house. Added a tablespoon of pulled pork I had left over to each cup. Good stuff! Now I need to pick up some thick-cut baloney from the deli counter this weekend.

Simple Mexican style rice! My version is called gringo rice!
6-8 serving size instant brown rice cooked to box instructions (microwave)
One chub chorizo (1lb)
Cooked down.
Add rice to pan with chorizo
And we mix!
Season to taste,salt &pepper
garnish with chopped cilantro
Could be done with riced cauliflower steamed and then pan fried to give it a crispier texture.
March: pork chops with grilled peaches
1 1/2 in thick bone in rib chop
Season with BFF
Start chop in cold pan on high for 2 min, flip for another 2 min
Reduce heat to medium and flip every 2 min until internal temp of 140°, (roughly 10 minutes)
Let rest for 5 minutes
Halve peach(es) and discard pit
Rub with Chosen avo oil and grill cut side down on high for 5 min
Turn and grill with lid down for another 2 min until tender
Cut half an onion pole to pole and sautee in pan until softened
Slice peaches and add to onions with 1 tsp balsamic vinegar
Salt and pepper to taste
Spoon onion/peaches on top of chop and finish with a drizzle of balsamic reduction (optional)
March: smoked st louis ribs
-Get your ribs and remove the silverskin
-Use plain mustard as a binder for the seasoning
Season liberally with your favorite bbq seasoning. I use the smokehouse maple from mccormick (my wife likes that seasoning)
-allow to adhere for 30 minutes.
-smoke ribs for 2 hours between 250F and 275F, or until a mahogany color (i always use oak for smoking ribs)
-spritz ribs once after the first hour with a 1:1 ratio of water and apple cider vinegar
-once color is achieved, wrap in foil with several pads of butter, brown sugar, and drizzle of honey on the meat side
-put ribs back in smoker meat side down for another 2 hours, or until tender
-optional: unwrap ribs and glaze with favorite bbq sauce, leaving the ribs in the smoker long enough for the sauce to thicken
-serve

Comfort sandwich
3 slices of bread
Peanut butter
Sliced banana
Strawberry jam
Soft butter
Spread peanut butter on one piece of bread and top with sliced banana and 2nd piece of bread. Then spread peanut butter on the other side of the original piece of bread, then a layer of strawberry jam followed by the 3rd slice of bread. Basically a 3 layer sandwich. Then butter and lightly toast both sides. Slice and serve with a fork.
Alternatively you can beat one egg, then dip the sandwich and fry Ala French toast style and serve with warm maple syrup.

I used this technique but instead of using baloney I used Prosciutto wrapped around the egg. It's absolutely divine. But very easy to burn the Prosciutto in the oven if you're not careful but totally worth it.
March: Breakfast Cilantro Lime Rice and Eggs
* Cilantro Lime Rice-prepared according to instructions (we just use costco's instant rice 😂)
* Two eggs cooked over easy using beef tallow (if possible), seasoned with a little soy sauce, generous amount of cracked pepper, and generous amount of Bragg seasoning-24 herbs & spices version
* Serve eggs on top of rice (but you can just mix it all together before eating because it's better that way. Ugly delicious for the win ❤️)

March: Banana Icebox Pie
Ingredients
Graham cracker crust (I use store bought)
8 ounces cream cheese
1 cup powder sugar
1 cup cool whip
2 small packages french vanilla pudding
3 cups milk
2 bananas
Cinnamon Sugar
Directions
1. Mix cream cheese, powder sugar, and cool whip.
2. Spread over crust.
3. Slice bananas and spread over mixture.
4. Mix french vanilla pudding with milk.
5. Pour over bananas.
6. Spread a layer of cool whip.
7. Chill (in freezer) till it sets.
8. Pull from freezer and sprinkle cinnamon sugar over top.

March - Wisconsin Dublin Coddle
1lb bacon
1pkg bratwurst
3lbs potatoes
1 head of cabbage
1 yellow onion
BFF
One can of beer
Cut up bacon and fry… remove bacon, fry brats for color. In a crock pot or Dutch oven - laying cut cabbage initial wedges, cut onion into wedges, add bacon and brats on top of cabbage/onion… second with salt, pepper, garlic… and then top a beer over the mixture (Guinness beer would be great - but I just use what I have… typically Leinenkugel's because I’m from Wisconsin.)
Cook on high for 2-3hrs (crockpot) until potatoes are fork tender.

Green Chicken
4-5 chicken breasts cubed
1 large white onion
1 bunch cilantro
15 poblano peppers
1-2lb mushrooms (preference) sliced
6-7 garlic cloves
24 oz heavy cream
1. Cook the diced chicken in a pan until golden brown, move to 12x9 pan
2. Char poblanos (with broiler or gas burners) after charred place under a dish towel to slightly cool
3. After somewhat cool take out stem and seed and peel off charred skin and slice
4. In large sauce pan add some oil, diced onion, garlic, sauté until onion is translucent then add poblanos, sauté
5. Add heavy cream and bring to boil and turn off
6. Add mixture to blender and blend until smooth ( prob 2 blends worth) add half the cilantro to one
7. Add mushrooms to the chicken and cover with green sauce.
8. Bake at 375 for about 35-40 min or until mushrooms are cooked
9. Salt to preference and serve over rice
I have very fond memories of being in high school and waking up early on Saturday to make fried bologna and scrambled eggs with ketchup. Mmmm boy!

Sprout Sandwich
1 small avocado
Mayo (measure with ur ❤)
~1tsp Bragg Liquid Aminos
A generous shake, Spike Vegit Original Seasoning
Tomato slice(s)
Cucumber slices (sliced oblique for more surface area)
Bell pepper slices
Red onion
Broccoli or alfalfa sprouts
A good, seedy, hearty style bread
Peel avocado, remove seed, put in a bowl and add the Mayo, liquid Aminos and Vegit Seasoning to make a spread. Refrain from eating it all before you make the sandwich.
Clean and slice veggies, spread with a generous amount of avocado spread, stack veggies, pile on sprouts, cut in half, EAT IT!
My brother-in-law used to make this for us when we visited him in Alabama, and after he retired, he made this for his friends and anyone who came into a local joint in Opelika Alabama.
His name was Joel Dudley, and he was an authentic "Southern Gentleman".
Joel and my sister Sally have since passed away, but this recipe always brings back memories.
Quick story, my dad and I had tried for months to get rid of a groundhog that was tearing up our garden in Ohio... Joel came to visit and with the first shot killed the groundhog and looked at my dad and I and simply stated ... " Northern boys can't shoot".
He was an original, and this recipe for tomato gravy has become a classic in our family.

Ingredients
· 8 slices - Bacon
· 4 TBS - Bacon grease
· 1 Cup - Vidalia Onion (finely chopped)
· 1 tsp - Butter
· 2 TBS - AP Flour
· 15 oz - Diced Tomatoes
· 1 Cup - Chicken Broth
· 1 TBS - Tomato Paste
· 1 tsp - Sugar
· 1/2 tsp - Thyme (optional)
· 1/2 Cup - Heavy Cream
· Salt & Pepper to taste
Directions
· Fry bacon until crisp in a large skillet.
· Remove bacon and all but 2 TBS of the bacon fat.
· Add diced onion and sauté until translucent
· Add butter and flour and continue to cook until the flour is absorbed
· Add remaining ingredients except milk and bring to a light boil
· Continue to simmer until the tomato gravy has thickened.
· Once thickened add milk and crumbled bacon.
· Serve over biscuits.

March: Belfair Fish Tacos: My wife and I love fish tacos, but couldnt find a good place in our area that could make them. Ended up developing this recipe based on the flavors and textures we like. Figured you would understand since you run a great taco shop!
Slaw
-1/4 head cabbage
-1 large carrot
-1 large lime - zested and juiced
-1/2 cup Mayo
-1/4 cup table cream (or sour cream / milk)
-2 tsp garlic powder
-1 tsp onion powder
-1 tsp chili powder
-1 tsp cumin
-1 tsp smoked paprika
-2 tsp vinegar
-salt and pepper to taste
Fish
2 large tilapia fillets or cod (thick meaty pieces like from Costco, not thin)
Batter
-3/4 cup AP flour
-2 tbsp corn starch
-1/2 tbsp baking powder
-3/4 cup cold water
-1/2 tsp salt
Directions
Make slaw up to 1 day in advance (min 2 hours)
-Julienne carrots and slice cabbage thin w/ mandolin, place into large bowl
-mix in mayo, lime, table cream, seasonings and vinegar until combined and place in fridge
Make batter and place in fridge for at least 10 minutes before frying
Heat oil to 350 F
Cut fish in half length-wise, then cut in half width wise, leaving 4 small taco sized pieces - season lightly with salt and pepper
Dip fish in batter and fry for about 10 minutes until crispy or desired doneness, key is to make batter crispy (batter will be somewhat lighter in color)
Place fish onto wire rack to drain and salt right away
Assembly
Put fish into warmed tortilla, top with slaw, pickled red onions, salsa verde, cilantro and queso fresco
Serve with cold cerveza w Lime

Down here in north carolina the bologna is sliced really thick off a tube of bologna before frying it, then cut a slit in one edge to keep it from curling while cooking.

sam i want a knife so here’s a recipe for march: rasta pasta with jerk salmon
Cook onion, and bell pepper (any colour) until soft add garlic
cook spaghetti
season salmon with cayenne, and garlic powder onion powder, salt, pepper, put jerk paste marinade on top cook in oven or air fryer i use air fryer because it’s way faster
add cream to the vegetables mix in jerk marinade add Parm until thicken
add the spaghetti noodles serve with the piece of salmon on top and more Parm cheese
***MUST MAKE**** march:
Corkscrew the middle out of a dill pickle
stuff a hotdog or through the middle
dip in jalapeno based batter
deep fry
Must dip in a killer fry sauce
March: Tomaine Breakfast 0:13 Cassarole
10 slices sourdough bread
1 slab ham steak
2 cups shredded sharp cheddar cheese
9 large eggs
Butter
Mustard
5 1/2 cups milk
Salt & pepper to taste
Spread Butter on 5 slices of bread, spread mustard on the other 5 slices
Cube bread slices- set aside in a bowl or plate
Cube the ham, set aside
Mix eggs, milk, salt and pepper to taste in a bowl
Butter or Pam the inside of a 9x13 casserole dish
Start to layer the following:
Some of butter and mustard bread
Some of the ham
Some of the cheese
* continue layering bread , ham, cheese*
Pour egg and milk mixture over layered ingredients - let set in fridge for one hour up to 24 hours
Turn oven on to 350 degrees
Bake for 30 minutes covered with foil
Uncovered, top off with more cheese, bake uncovered for another 30 minutes at 300 degrees or until golden brown.

as a snack after the casserole was forgotten and left out on the counter for hours in the summer .. hence the name of this dish. BUT, this is super good and feeds a lot of people… just gotta make sure to put in the fridge 😂
I took the chaffle idea, and experimented. I figured out that a waffle iron is all you need to make a perfect breakfast sandwich. A mini waffle iron, that is. You can use it to toast your English muffins, cook your beaten egg ( mine the added cheese) heat up a precooked sausage patty (I used Jimmy Dean precooked breakfast sausage patties), and it doesn't take very long at all. I used and olive oil spray on my muffins, and put them on the iron, split side to each griddle on the iron. Removed them when I thought they were good enough, then layered the American cheese on the bottom half. Then, I beat the eggs (one at a time) to cook on the iron. I also salted and peppered the eggs. I used very small eggs, because larger ones will boil over. I also leave the lid up for roughly half a minute before closing. I think it helps to keep the eggs from spilling over. Once the egg starts to puff up the lid, give it about 10 more seconds, and it's ready. I'd say a minute per egg, or so. Now, I heated up the sausage in the microwave, as per the instructions, but I don't see why you couldn't heat it up on the iron. I work in a welding and machine shop, so I was cutting corners a bit, trying not to get caught by the bosses lol. I put the patties on top of the egg, and put the lids of the muffins on. Did three sandwiches in roughly 10 minutes. You can also put the sandwiches in the microwave for roughly 20 seconds, to reheat a little, and melt the cheese a bit more. They pretty much tasted exactly like a Sausage, Egg, and Cheese McMuffin. Very delicious!
Inspirational! I quickly assembled a recipe with many variations based on egg in deli ham cups. Doesn't need to be a muffin pan, could be a twice baked potato or yam. or a scooped out avocado with guacamole as the topping sauce. And, the egg need not be cooked in the oven with the meat and trimmings, instead make a soft boiled egg while baking, add it when the the oven contents are ready. Can't wait for breakfast;-)
March Recipe: PBJ & Egg Sandwich
Ingredients:
Peanut Butter (personal preference is JIF)
Jelly (grape or strawberry, not anything boujee)
Egg
Plain white bread
Instructions:
Scramble or fry and egg
Toast two slices of plain white bread in toaster
Spread peanut butter and jelly LIBERALLY on your toast
Add your egg and BOOM, you have just created a simple, odd, and delicious sandwich from my childhood!
I was expecting his tweak to be some pepper flakes. But paprika is ok, too. Since it's just me, myself, and I, this recipe can be shrunk so I can use a smaller cupcake pan. That's always good.
Diablo Clubhouse Empanadas- from Panama.
2lb ground chuck, (I use half chuck and half bison)
1/2 pound Ground pork, (I do a pound of ground pork)
1 onion chopped,
2 cloves garlic chopped,
salt and pepper,
2 jalapeños or 2 habaneros (I do 2 of each),
1 TB chili powder,
3 TB Tomato paste. (I always end up using a little more, but can’t tell you how much because I’ve never made just one batch, always have to do 3-4x’s the recipe or my family will be upset there wasn’t enough to share!)
Sauté onion and garlic, add meat breaking up so it’s small and crumbly, when it’s fully cooked drain off fat stir in the remaining ingredients let cool to room temp.
Dough- this was the part my great grandmother did. The clubhouse just used a regular pie crust.
This dough should be made in small batches, refrigerated and don’t let it dry out. The more you work it the harder it is to work. I add all the ingredients except the flour to the mixer and beat it until it’s mixed well then stir in the flour. Do one batch at a time and work half the dough at a time. Don’t add too much flour as you work the dough or it won’t be as fabulous!
1/4 tsp salt
3.5 oz butter
2.0 oz shortening (butter flavored is better)
6.0 oz cream cheese (yes- full fat!)
3-4 TB cold water
2 TB water
When assembling the empanadas seal with an egg wash and brush the tops with egg wash. Bake at 350 for 25-30 min. If you have any left they freeze great. I like mine with cream cheese.
You won’t be sorry! They are worth the effort! I make these every year for my husband, dad, and brothers, they each get a gallon sized bag full of empanadas!
March: Sausage Dip.
2lbs of Jimmy Deans (sage or regular)
3lbs of cream cheese
1 can of rotel (diced tomatoes for non-spicy)
Brown sausage. Season with Cajun (2 tbs) and minced garlic (2 tsp). Drain. Melt cream cheese (optional: add milk to help process). Add meat and tomatoes. Chips of choice in descending order: Sweet chili Doritos, Nacho cheese Doritos, Tostitos with hint of lime, or regular Tostitos.
