making ghee & carrot halwa with my mom

- A common question I get is the difference in brown butter, clarified butter, and ghee. Here’s a quick summary:
- Brown Butter: has milk solids, can’t use for intense cooking.
- Clarified Butter: milk solids not toasted & removed.
- Ghee: milk solids toasted & removed
// RECIPE //
1️⃣ Add however much unsalted butter you want to a heavy bottomed pot and melt on med heat.
2️⃣ Slowly stir and you’ll see it get frothy. Leave it on low heat to get rid of all the water content or alternatively you can skim the foam if your pan/pot is too small or to save some time.
3️⃣ Once you hear crackling and then see boiling, put the heat to the lowest setting to maintain a simmer. You can also skim more foam if needed here.
4️⃣ You’ll see the color slowly change from yellow, to gold, to darker golden. You’ll also see the milk solids rise to the top and then fall to the bottom and also turn dark brown.
5️⃣ At this point, very carefully move the pot off heat and the residual heat from the pot will continue to toast the milk solids without burning them.
6️⃣ Let it cool completely and then strain into a clean airtight jar by using a sieve with a cheesecloth on top.
7️⃣ Store in a dark cabinet and it’ll solidify within 1-2 days.
8️⃣ Optional: use the leftover browned milk solids on some rice mixed with sugar, in your pie crust / cookies, or even roti/breads!
Gajar ka Halwa (the fast way)
Serves: 2
// Ingredients //
- 1.5 tbsp ghee
- 2 large carrots, grated coarsely (if you can find red carrots even better!!)
- 3-4 tbsp sugar (or to taste)
- 3/4 cup milk or coconut milk, room temp
- 1/2 tsp freshly ground cardamom
- (Optional) Chopped roasted cashews or sliced almonds
// RECIPE //
1️⃣ To a heavy bottomed pan, add ghee on low-med heat and then add carrots. Cook for several minutes until they've softened a bit.
2️⃣ Add sugar and roasted nuts if using and continue cooking for a few minutes, scraping the bottom of the pan as needed.
3️⃣ Once you see the ghee start separating and sticking to the pan, turn your heat to low and slowly add in your milk while constantly mixing.
4️⃣ Continuously mix until the halwa has thickened completely.
5️⃣ Turn off heat and mix in cardamom powder and top with extra roasted nuts if you'd like.

Her moms hands remind me of my mother and her mothers hands. Im adopted, my moms side was puerto rican, and she was the first to leave her country to move to the usa. One of my best memories with my mom is holding her hands, how soft and silky they were. I always loved her pigmentations and she adopted me older. She was self concious of her her skin, but i always saw the hard work in her soft wrinkles at 45.

I still find myself wandering back to your channel from time to time. My family is from a different culture than yours (food and location wise in the least), and yet something about your cooking videos seems so familiar and comforting, like the warm feeling you get in your chest when you are served fresh warm food. My family has mostly lost connection to our roots, only having a few old recipie cards to keep the connection alive. Maybe that is why seeing you cook with your mom or food from your culture brings this interesting feeling. But anyway, have a good rest of your year, and be safe
