6 Aburaage - Fried Tofu Pouches
300ml Dashi Stock (1.27 us cup)
3 tbsp Sugar
2 tbsp Mirin
2 tbsp Soy Sauce
3 Dried Shiitake Mushrooms
30g Carrot (1.76 oz)
4g Dried Hijiki Seaweed (0.141 oz)
Vegetable Oil
4~5 tbsp Shiitake Liquid
½ tbsp Sake
½ tbsp Mirin
½ tbsp Sugar
½ tbsp Soy Sauce
1 tbsp Toasted White Sesame Seeds
Omelette Sheets (2 eggs + sugar + salt + potato starch dissolved in water)
Mitsuba - Japanese Wild Parsley
Shoga Amazuzuke - Pickled Ginger
300ml Japanese Rice (1.27 us cup)
300ml Water (1.27 us cup)
1 tbsp Sake
5x5cm Dried Kombu Seaweed (2x2 inch)
50ml Sushi Vinegar (1.76 fl oz)
(substitute: 2 tbsp rice vinegar + 1½ tbsp sugar + ⅔ tsp salt)
How to Make Steamed Rice
Wash and drain 300ml rice (1.27 us cup) with a sieve basket. Put the rice in a rice cooker and add 300ml water (1.27 us cup), 1 tbsp sake and 5x5cm dried kombu seaweed (2x2 inch). Let the rice soak in the water for 30 minutes and turn on the rice cooker.

水:300ml
酒:大1
出し昆布:5cm角1枚
※米は30分間分量の水に浸けたあと炊飯する。
すし酢(市販):50ml
※または
酢:大2
砂糖:大1と1/2
塩:小2/3
油揚げ:6 枚(いなり寿司用、または、薄めの油揚げ)
出し汁:300ml
砂糖:大3
みりん:大2
しょう油:大2
干し椎茸:3枚
(※干し椎茸は軽く洗い、水を加えて冷蔵庫で一晩かけて戻しておく。鍋焼きうどん参照。)
人参:30g
乾燥ひじき:4g
(※ひじきは水に20〜30分浸け、よく洗って水気を切っておく。)
炒め油:少々
椎茸戻し汁:大4~5
酒、みりん、砂糖、しょう油、:各大1/2
炒り白ごま:大1
薄焼き卵(卵2個、砂糖、塩、水溶き片栗粉少々で直径17cm位に焼いておく)
三つ葉
生姜の甘酢漬け(市販)

I have a serious addiction to inarizushi. I could eat them all day and never get sick of them.
They ought to have Inarizushi eat-offs just like Nathan's Hot dogs in New York. Don't know how many I can put down, but I bet I could sink a small country's economy real quick!!

Bamboo shoot, gobo or lotus root can be used instead of the hijiki seaweed :) You can also skip it if you make a small amount.
My goodness, this chef is skilled: the cutting strides, the instantaneous reactions, the list goes on. You can tell she's been a well experienced chef for years, (even though she looks so young :) )What a pro, I'm really amazed by the wealth of knowledge she has with cooking and food preparation
You can definitely tell. I wish there was a bio for her, where she trained, etc. I recall reading in another video that she trained in France as a pastry chef. Love you chef and Francis forever!

Mirin is a kind of rice wine similar to sake but it has much higher sugar content. It is an essential condiment for Japanese cooking :)

Nothing is quite as sweet or heart warming when the music kicks in and Chef-san tells you to choose colorful things to make your Bento more visually more appealing. Very very sweet touch.

Japan is in a birth rate catastrophe right now. The birth rate is so low that the population is predicted to be half of what it is now in 50 years. This is because no one is getting married and having children (probably due to the amount of technology they have, they've become disconnected).
Its highly likely that she's unmarried and with no children.
(I realize this is some months old; sorry!) Actually, Chef-san IS married. That’s her husband voicing Francis, and (I think) also behind the camera. As for the ring, when working with hands and/or getting hands wet, a common concern is the ring slipping off and getting lost. Wouldn’t do for it to fall into the sink, or into the food LOL. So she like many people takes it off. (I also am not sure if it’s as regular a custom Japan as it is in the West to wear wedding bands - gonna have to look that one up)

Belated, but the inarizushi they serve at a place by my home doesn't contain any vegetables in the rice. But if you're looking for something less plane, you could always try adding meat to it? I just say that because a lot of the time I use mushrooms in the place of meat (more-so for the texture that I would have lost in making, say, yakisoba with 1/4 of the meat or no meat at all).

Would it be possible to make your own fried tofu from fresh tofu at the grocery store?
Dear chef (and everyone), if there's no store sold abura age tofu in where you life, how to turn the normal tofu into that abura age tofu pouch?
Slice a normal tofu block into 4 cuts or on a drsired thickness to make thin rectangle then slice a pouch on the middle of the tofu blocks you just sliced and carefully cook them.
I suggest that you used the type of tofu that is not too soft or too tough for better results...
The result is that you made a half pouch AburageTofu
Quarter inch slice of tofu and deep fry in oil.

The Japanese equivalent to cooking wine. If you go to the asian section at a local market, there are probably Chinese equivalents that does the trick as well.

i have now made this inari sushi recipe twice now XD very delicious.
but i don't use dashi stock, i use dark colored vegetable stock i made myself.
because i don't want animal die for my meal.
