wow you guys went straight forward to the core of the popular street food! We most mexicans do not even try some food you had such as tacos de lengua hahaha.
Word of advice, while the Mexico City subway is safe it does have pickpockets, hold on tight to your phone and wallet (specially if you get into a crowded subway car).

Don´t worry about the Camotes, even if you live here in México is almost a miracle to find one Camotero (camote man) on the street they usualy work from dusk to early night, is a matter of have real good luck.

The "Pancita" soup, is from cow stomach and "Central de Abasto" The biggest Market in world; is 5 times as much as La Merced.

currently there are better restaurants of "churros" than the Moro, in Plaza de Coyoacán they sell them in small foodtrucks
