Sabu Makha: Sago/sabudana with summer fruits in this no-cook Bengali snack

- Sabu makha is Bengal summers in a bowl. This no-cook snack made with sabu (sabudana in Hindi) is perfect for the hot and humid days when cooking can feel like a painful task even for those who love to cook. You really can use any fruit you like, but we have chosen Martaman bananas, sweet, ripe and fragrant Himsagar mangoes, and soft and juicy variety (gola) kathal or jackfruit. The grated coconut adds texture and flavour with every bite. The acidity from the Gandharaj lime (a lime found in Bengal that is similar in fragrance to kaffir lime) cuts through the sweetness to create the perfect balance. This is something we grew up eating for breakfast and sometimes for evening snack in late summer and monsoons when the mangoes and the jackfruits ripen.

An interesting thing which I observed in this recipe is the fruits used. They are collectively called முக்கனி (Mukkani) in ancient Tamil literature, i.e. மா (Ma) (mango), பலா (Pala) (jackfruit) and வாழை (Vazhai) (banana). These were known for their sweetness.

My mom still makes this every Neel Shashti and on Bipottarini Puja... of course, my grandmother would eat this every Thursday because she did Lakshmi Puja weekly.

Though I'm not a sabu fan, i love this kind of sabu makha. My mom prepares the same dish using muri(puffed rice) & i promise it's equally mouthwatering. Aam, dudh, kanthaali kola, kanthal, batasha and muri 😋😋😋😋 heavenly.

I always have sabumakha with banana, mango, grated coconut and mishti doi .. never tried it with kathal and gondhoraj lebu and milk .. will try it sometime soon

I think gondho raj lebu has such little juice that it won't curdle the milk. Or at least that is what i think.
