Mohit Bhai, I would suggest you to go for "Royal Enfield Hunter 350" instead of BMW 310GS. It was launched in the US market about two months back for just 4000 USD and has a weight lesser than other 350cc or 500cc variants of RE. Here are few reasons why you should consider this motorbike:
Firstly, it weighs less than 180 kg( similar to that of 310GS). Your motorhome allows you to carry around 650 kg of total load. Weight of two people+ Fuel(24 gallons of diesel, full tank of propane)+31 gallons of fresh water +rack and motorbike would still leave you with 50-60 kg capacity to carry luggage, groceries ,utensils etc.
RE bikes are reliable, cost effective and extremely popular in Europe and UK and now gaining popularity in US. You will not face any service related issues in Europe due to large presence of RE service centers there.
Hunter 350 looks aesthetically pleasing with various color options. It is a retro- cruiser and you don't have to be very tall to ride it. It has similar looks as that of Indian Scout (which you liked) but weighs much lesser and costs much less. It has a more comfortable pillion seat as well. Mata ji can ride with you occasionally.
And lastly it is an Indian Brand and most of the bikes exported are proudly made in India.
Otherwise you may go for Vespa scooter which Mata ji will find comfortable to sit on or even a dirt-bike which in case you want to ride alone, both will weigh under 120kg.
Mohitbhai instead of buying bike in us / canada, my suggestion is to buy bike in Europe itself, so when you complete your trip just sold there, so no need for customs etc. Etc.
