    Serves 3 - 4 person
    Marinating Ingredients for pork
    --------------------------------------------------------
    600g of pork chop or pork ribs
    1.5 teaspoons baking soda (can be reduced to 1/2 tsp)
    1 tablespoon oyster sauce
    0.5 teaspoon salt
    0.5 teaspoon sugar
    0.5 teaspoon five spice powder
    0.5 teaspoon curry powder
    1 teaspoon sesame oil
    1 tablespoon light soy sauce
    1 tablespoon Shaoxing Huatiao cooking wine
    1 egg
    3 tablespoons of cornstarch
    A few dashes of pepper
    Tangy gravy for pork
    --------------------------------------------------------
    2 tablespoons plum sauce
    1 tablespoon chilli sauce
    2 tablespoons ketchup
    2 tablespoons A1 sauce
    2 tablespoons HP sauce
    1 tablespoon sugar
    some cornstarch solution
    2 - 3 cloves of garlic
    1 cup water

      what ingredient u replace with black vinegar? i find a authentic sweet n sour pork using black vinegar, but a lil bit hard to find, other people using white vinegar

      @@CINDY-kd6ep So many things. Hp is a close cousin of the Pickapeppa brand original sauce (they taste exactly the same but the Pickapeppa tastes better, more fruity, generous, better) and I find it strange that all the ingredients are local to Jamaica, not England... just makes me wonder about the origins (I did read all docs available, UK "invented" the HP a few years after invading Jamaica...). PAP have a ton of sauces styles and, I do admit, prefering to make them myself, I still think they are a rather tasty and convenient thing to have in the pantry, Justin Case.

      @@spicenpans I wonder if you know about the Pickapeppa brand, you should try to experiment with them, they might replace a long list of american "condiments" that hide most of their real ingredients behind legal loopholes. Pickapeppa lists it's all natural ingredients right on the front label and tastes quite grand. I think their mango sauce would replace the whole list you have there :) Just a thought. No they don't pay me. I just think it tastes like something you'd make yourself. I just like to emulate sauces like wafu (mine is too good) and the mango one I just named, I did too, it was begging for it. Sometimes i find sauce that just replace a whole lot of other contraptions and open my eyes to simplicity and taste without compromise.

    I moved to the US about 5 years ago and started cooking only then.     I did it!!!!!!!! Was missing home so much, decided to make it. My family love it. As I don't hv Asian shop near me so couldn't get hold of HP sauce and A1 neither black vinegar, so I used balsamic vinegar, turns out great!!!! Thank you spice N pans!!!!

    I tried the recipe for a gathering, but since I couldn’t get my hand on the A1 sauce, substitude it with Worcestershire sauce and tasted amazing.. everyone was complimenting the dish..thanks for the recipe

    I cooked this meal last night, but i cooked the ribs in a pressure cooker first with a chicken stock. Then cooled the ribs, added ingredients dor the sauce into the wok and tossed the ribs..added rice noodles with stir fried veges and ginger..was beautiful. Loved the sauce recipe as it was not too overwhelming

    Superd! I marinated the pork overnight, you can literally taste curry powder, five spice powder from the pork apart from the delicious source.

    Hi
    1) to achieve the crispy coat, cornflour is the trick or is it bec e inital round of fire is medium to high or
    is due to 2nd round of very big fire?
    2) A1 & HP sauce. How do they taste like? Is regular vinegar a good replacement?

      Hihi. All the above plays a part. So cornflour is important to help make the pork crispy. The first round of deep frying in medium heat is to cook the pork to 80 percent done. The second round of deep-frying helps to make it even crispier. That’s the purpose of double frying. The fire has to be high when frying the second time because you want to force out the residual oil that’s trapped in the pork.

      Hihi. We haven’t tried using the oven but we need it can be used. However, maybe instead of using the oven, you can pan-fry the pork for better outcome. You can use pork chop which includes the loin with the rib and back bone on.

      Hihi. You can try airfying them at 160C for 20 mins but before you airfry, please coat them with flour first. Another alternative is to pan fry the pork.

      +Regine2967 hi Regine. HP sauce is a brand of brown sauce from UK. It tastes like a very vinegary-tomato sauce. In case you do not have HP sauce, you can substitute it with tomato sauce with dashes of black vinegar. Hope this helps 😊

      In UK where HP sauce originated, it is also described as fruity. It's believed to contain apples and dates. It is commonly eaten with bacon on a British fried breakfast. It is widely known as 'brown sauce'. It is a condiment used by northern Industrial England and is not considered a very "refined" or "atas" flavouring.

      +Julia Heng hi Julia, A1 sauce is a steak sauce. You can look for A1 sauce - yes that's the name of the sauce in supermarket. Just in case you can't find it, you can substitute it with tomato ketchup. Cheers

      Hahaha Coke Friend 😆😆😆 I’m a reformed man. No more coke nails! Just googled Peking pork. They are the same as this. This is not really sourish. The vinegar added just adds a different dimension to the dish. This is our all-time favourite pork dish. Try it and let us know what you think. Happy cooking!
