His wife Countess Canning demanded a special sweet to be prepared for her birthday. The famous sweet chef of Bemgal, Bhim Chandra Nag prepared one with which the Countess fell in love. It was named Lady Kenny(from Lady Canning)'s sweet and ultimately regionally spelled Ledikeni. This is Bengal's heartthrob with Rosogolla and marked the origin of all Gulab Jamun stuff. Unlike the later, Lady Kenny's sweet, is sweet. While gulab jamun has
a slight rosy flavour.
And a word of caution: when doing vidoes associated to Bengal do not relate our sweets with something else. Bengalis are extremely proud and narcissists...In a good way.

Putting it out there. I made Korbin try Baked Rosogolla from Balaram Mullick and he said "It tastes like mud".
Banchharam is not that good. Balaram Mallick and Radharaman Mallick's one is tasty specially during winter. Also Nolen gur is a bit of an acquired taste, the kind of picky Korbin is about tastes and textures I am pretty sure he won't like it. And a nice Nolen gur er Sandesh is probably something he can like.

That's is baked rasoogolla only you can find in Balaram Mallik and Radha ram Mallik one of the oldest sweet shop in kolkata , West Bengal, India
I would like to point out a couple of things which might help you guys understand Indian, specifically Bengali sweets better going forward. When it comes to desserts, westerners are most likely to think of ingredients like flour, butter, chocolate, eggs, cream etc. as most western desserts like cakes, cookies, custards, puddings are made from these. So, it's totally understandable that you try to relate textures based on what you know. We all do that! Indian sweets on the contrary are made primarily from milk and a variety of milk products alone, with minimal to no use of eggs or flour, with exceptions of course (like the lobongo lotika, malpua in the video or even laddoos and gulab jamuns which are made from flour containing doughs/batters which are fried and then dipped in sugar syrup similar to a funnel cake).
Now, Bengali sweets and confections specifically are mostly made of what you know as paneer/cottage cheese/curd cheese (milk solids precipitated using citrus/vinegar) locally known as "chhana", whereas North Indian sweets mainly use milk solids called "khoya/mawa" (solids left behind after evaporating milk to dryness). The roshogolla and sandesh are both made from "chhana", just processed in different ways with the additions of flavoring/coloring for different varieties. The processing of chhana to make sandesh is such that it gives a fudge-like texture. The two most popular varieties are the plain (white) and jaggery/caramel (brownish) infused roshogolla and sandesh, the latter being seasonal during winter months. A modern twist to the roshogolla, which you saw in the video, the baked version, is simply roshoglla laid out in a single layer, then a milk/cream/condensed milk mixture (think of it as an eggless custard) poured on top, then baked till golden brown. It's a relatively modern creation. The rajbhog is basically roshogolla on steroids, bigger in size, infused with citrus flavor, and a bright yellow/orange (artifical) color.
The other popular sweet from the video, the mishti doi, is nothing but curd or yoghurt as you would call it, sweetened and flavored with different stuff. Sometimes they bake it as well to give it a "creme brulee" look, as you pointed out in the video. Now, this is just a basic insight, there are thousands of varieties of confections but 95% are made from "chhana" and milk, just processed differently. Hope this gives you some insight into Bengali sweets. Cheers from a sweet loving Bengali!
