The saw is for cutting through bone. Interested in knowing how your hometown butchers dealt with bone in cuts. Most butchers wouldn't use a knife on cutting through bone due to the high risk of damage and dulling. Maybe you can post a video showing how they do it so we can learn.
Old hogget was hideous, poor conformation, poorly skinned at the abattoir, too much blade bone left in the best end (for profit! ). Pork too fat, chine left on chops (again for profit! ). All in all your typical average butcher.

there is no cross contamination in one piece of meat. Gloves are not more "healthy" than human skin - just wash your hands often.
