    Eric your videos have helped my sausage making tremendously! It’s great to have a creator that responds to comments and helps people out. At this time I have a LEM half horse grinder and a LEM 5 lb stuffer which after making a couple batches of sausage I learned it is to small.

      I have a smaller grinder but use a 10lb Hakka stuffer with dual gearing and it works great. Having a smaller grinder doesn’t matter as much but a large stuffer helps a great deal. Although the 10lb stuffer really only holds about 8.5lbs.

    Just started making snack sticks in the last year. This channel has been so valuable. Thank you for the knowledge and guidance. As of right now my stuffing is done with a jerky cannon. Time consuming but very rewarding.

    I use a 10lb manual stuffer. It works good but hard to crank. You have taken over my life the last few weeks. We have been making sausage like crazy. Freezer is just about topped off. What a great channel. Keep up the great work.

    Your channel is probably my favorite on CZcams! I love the detail that you go into on every recipe! I've been using my uncle's antique Wagner Stuffer #2. It's works but is extremely heavy and cumbersome. It would be great to not have to break my back just getting the thing set up! Thanks for the great content!

    I used my KitchenAid briefly until I realized the limitations to put it mildly. I got a 5 lb stuffer because it was in my budget and it made a tremendous difference. I'm so thankful for Eric and the channel as I started my sausage making journey with season 1 of Celebrate Sausage and haven't missed a single video. Thanks for all of the videos Eric 😇👍

      That's what I started with a few weeks ago! You were being polite when you mentioned that the KitchenAid has 'limitations'. I tried making Jalapeno cheddar smokies only to find that the cheese was getting stuck in the feed tube and very little was getting into casing.
      Flash forward to today and I have an 11lb stuffer with a meat grinder on the way. Talk about escalating quickly!

    This will be my first trip into the snack stick world. I’m following the video you posted on handling sheep casing awhile back which I hope makes things easier. My dedicated stuffer is a small five pounder that’s a little temperamental but it’s what I’ve got. I’m looking forward to making these snack sticks. Thanks for the recipe guys.

    Great series, I have many of these sausages marked to try. I use a 1 HP grinder, I started using a kitchenaid attachment but the step up to a "real" grinder was one of the best things I did.

    I've been using a small manual stuffer, but being able to use only 1 hand to manipulate the casing+stuffed end usually ends in more air bubbles, specially for medium to larger diameter sausages. Great job on the sticks, love this way you are showing that utilizes ECA!!!

    I’ve always been of fan of sausage and snack meats and since I came across you channel and the way you explain everything, I’ve been extremely enthusiastic of trying to make my own sausages and snack meats. I’ve never owned a sausage maker or a meat grinder other than my parents old hand crank grinder😂. Great instructional video❤

    Been working to up my game on sausage and no doubt, these snack sticks are on my list. Still using the very basic equipment, Kitchen aid for grinding and a small 6-pound horizonal stuffer. Fingers crossed, by this time next year, I will be cranking out tons a sausage and snack stick with all new equipment. Thanks for all the content, love the videos.

    Thanks for another great video. I currently stuff my sausages using a 5-pound stuffer which works great as long as you are making smaller batches. The 25-pound electric suffer sounds perfect for any serious sausage enthusiast making larger batches.

Another great one! just ordered a kitchen aid grinder but thinking about returning it and going with a dedicated meat grinder was thinking about a grinder from "meat your maker" but i think you channel has me leaning closer and closer to the #12 from the sausage maker.     Im a backyard bbq person who likes to cook and improvise with new flavors. Two of my favorite things you definitely don’t find in Florida are hungarian salami and kabanossi sticks, so watching season 2 made me realize i gotta do something, after been almost done with season 4, I already own a #22 MEAT! grinder, a 15lb stuffer (manual) and a 7qt mixer. I’ve done more than a few of your sausages and man!!! I I have enjoyed every single one of them. Now im just working on those flavors im looking for. I appreciate what you do. And by the way, supplies from the Sausage Maker, meat from my local butcher shop and the best pork from Porter Road make me very pleased

    Love the series. Using a cabelas grinder and a homemade sausage stuffer I found on marketpace sold by an elderly couple downsizing. The chamber is stainless from an old frozen custard machine. Still getting used to it but for $25 it is a big step up from using the grinder to stuff. Already made a few recipes from tge channel. Thanks!

    Missed this one as I was off shore fishing in the gulf yesterday and yes I did catch a bunch of fish.
    As far as my stuffer goes mine is am102 year old( my grandparents bought it in 1921) enterprise 4 qt manual stuffer. The wife hates when I make sausage as I have her turn the crank.
    One little trick I do when doubled or triple grinding is to make the little ball and refreeze them before the next grind.

    Eric my friend you made my day. I love pepperoni. So much so that when it comes time to make pizza I wind up eating as much pepperoni as what goes on the pizza lol. Now I have a go to that will insure that I will have enough to build another pizza. I love your tip by balling up the meat to get that cold sticky meat to make another pass through the grinder.
    I started out using my meatgrinder to stuff but made the big upgrade by getting a 5 pound stuffer that has a high and low gear crank, just move the crank handle to which speed I need. That was such a game changer.

    I have been making snack sticks for a few years now, I started out using my grinder to stuff them with an attachment made for doing snack sticks. I bought a budget 7 pound stuffer and it works so much better and faster. I haven't tried making the pepperoni ones yet but it is on the list to try.

    I've made a lot of sausages, but never pepperoni snack sticks. I can't wait to try this out. The encapsulated citric acid seems like a nice touch also!
    My current setup is a 0.5HP grinder and a 10 lb sausages stuffer. Both are just "ok" and I've been eyeing The Sausage Maker's products for upgrades for a while!

    Thank you for the recipe Eric. I currently use a manual stuffer and it takes every muscle in my body to get the forcemeat through the smallest horn. The electric stuffer from the sausagemaker sounds sweet!

    We usually make sausages as a family, mostly fresh but some smoked too, love this recipe for sticks. That electric stuffer seems to make things easier, we usually stuff with the grinder horn but get all mushy.

    I have a dedicated hand crank stuffer and I made my first batch of jalapeno cheddar sausage with it 2 weeks ago. It is some of the best sausage I've ever had!

    I use a Smokehouse Chef grinder designed for the Kitchen-Aide. All stainless steel, dishwasher safe.. does an excellent job. Bigger grinding tasks are done by my LEM #12. Paired with a 5lb stuffer, that 25lb electric would ne nice!
    Excellent video today, I'll be trying these soon. I probably make a batch of sausage every 2 weeks or so. Thanks again for the series!

    Thanks for the great show. I use a Meat 1 hp grinder and a Meat 5 lb manual stuffer. Since I make sausage alone, having an electric stuffer would really make stuffing much easier.

    I made some venison cheddar jalapeno snack sticks once, about 15 lbs. I used a 5 lb manual stuffer. It took 6 hours to stuff the collagen casings. They tasted great but I promised myself I would not make these again until I get an electric stuffer so I definitely entered this contest.

    Good video. I purchased that stuffer after watching your review of it. Living just seven miles from the Sausage Maker I'm there quite often. I have a Valley Sportsman #22 grinder and 50# meat mixer. I also have the 30# Country Style smoker that I modified to operate with an Auber PID. My next batch of sticks will be made with sheep casings. I'm done with collagen casings.

    I followed this recipe but substituted a F-LC fermentation in place of the encapsulated citric acid. The snack sticks came out incredible. Thanks!

    Eric I love the series and will miss the daily surprise of what the sausage will be. I grind with a kitchen aid and stuff with a 5lb dedicated stuffer. Take care and thank you

    Love all your videos, as you know! I've been using a 5 pound magical stuffer, while my dad has been borrowing my 15 pound manual stuffer...both take a lot of time and effort. A 25 pound electric one would be a game changer for us!

    I currently have a MEAT! Your Maker grinder, i love it - it is a breeze to grind my batches, usually 2-3lbs at a time.
    My stuffer is a HAKKA stuffer. This is the biggest step up in equipment by far. Coming from a kitchen-aid combo grinder/stuffer to this is night and day. The grind function did just fine, but the stuffing was always cumbersome with the KA unit.

    Thank you for your videos. I have been learning a lot. I currently have a meat your maker 5lb manual stuffer. It works. But an automatic 25lb stuffer would be a game changer for sure.

    I bought a five pound stuffer a couple of years ago and since the Sausage Maker was out of stock for a couple of weeks in a row, I bought one from someone else. It really is a game changer if you had previously been using a grinder to stuff.

    I use a 5lb stuffer after watching last years celebrate sausage. I started using a kitchen aid mixer grin der attachment but found it easier with a dedicated grinder.

    I bought a neglected 3hp grinder and renovated it.
    Thing is fierce!
    I originally bought it to coarse grind chicken carcasses for my dogs, they get an amazing mix of various meat, bone fat and organ based on animal percentages.
    Anyhow I also now use it for my sausage grinds, although with a larger grind holes because of the power of that thing!
    It's so fast it actually removes the need for my stand mixer to break the meat down.
    I actually keep the grinding worm and blades, cutters in tie freezer for a day before use, one run though is generally all that needed.
    For stuffing, hands up I use one of the cheapest stuffers I could find while I wait for a bargain on a used pro model.

    Just purchased A LEM 10 lb. electric stuffer. Always used the hand crank before. Hopefully it will be a game changer. Really enjoy your channel and trying your recipes

    I have a manual 5lb small sausage stuffer. I love it even for up to 25 lbs of sticks. I don't make them but once a year so it works for me.

    An old electric grinder. Snack sticks are awesome! one day I'll have a curing chamber. The last time I pre-seasoned my sausage before grinding, I had a heck of a time trying to make snack sticks. The meat was so sticky, it was a real pain getting it through the horn. That electric stuffer is really nice, I'd try it again with one of those!

    I use my grinder and I believe that a dedicated stuffer would eliminate a lot of my problems. As always good show.

    Eric,
    Love your show. I am currently using a 10lb antique cast iron sausage stuffer that can double as a juicer for grape jelly. So a 25lb electric stuffers would be a HUGE upgrade!!

    Great video. I usually leave out the binder until after I grind.
