- Love a Manhattan? Of course you do, well, it's time you tried this delicious variation.
Switching different amari into classic cocktails is a really easy way to start playing around with flavours and make sure you don’t get bored of your favourite drinks! Averna is actually fairly sweet, with juicy citrus notes and so substitutes really nicely in for the vermouth in a classic Manhattan to create a close to perfect night cap!
Specs:
60ml (2oz) rye or bourbon
20ml (2/3oz) Averna
1 dash Angostura bitters
1 dash orange bitters
Cocktail cherry to garnish
Lemon or orange twist (optional)

I've been making Black Manhattans for a few years. I had one again recently. I think I'll be needing a new bottle of Averna soon. Thanks so much Cara. Great channel. BTW I love how you say "Amaro".
Haha!
One of my favs as a whiskey tender of too many years, thank you Cara!
I work at Bourbon and Branch in SF where this drink was created. We still get it ordered every once in awhile even though it’s not on the menu anymore. Apparently this is one of the cocktails that popularized Amari being used in cocktails
That’s cool! Yeah I think definitely a bit of a milestone drink 😊
This is a fun change of pace from the classic. Thank you!
Definitely one to try out. Think this might be a great "gateway" cocktail to introduce people to Averna
For sure going to have to make this version. Yummmy! Cheers.
This looks great. Can’t wait to try it. Love your videos!
Very nice . I love a Manhattan and that looks great . I really must widen the selection of bitters/vermouths, etc I have to hand in my bar. I'm forever just re-stocking the spirits !
Averna is becoming one of my favorite amari liquors. Excellent variation on one of my favorite drinks, the Manhattan. Averna alone on the rocks is really nice too for an after dinner drink.
Looove this drink. Averna is probably my favorite amaro
This is my go to at one of the local cocktail bars. Great drink.
I Just love how you love youre craft
Great to see a cocktail with an amaro siciliano!! I’ll whip some of these up next weekend!
That sounds lovely! Another great video Cara!
I love Averna. It tastes like heaven, doesn't go bad and is available everywhere here (Switzerland). And yes, the bottle is beautiful, even the contemporary one.
It is. Also, the only English is on the back and import labels. The entire front label is in Italian. Very classy.
Must try.
Omg I can't wait to make this. I can already imagine how good it must smell and taste.
A 2:1 Black Manhattan is my go to ratio. I still prefer a classic Manhattan but the Black riff is definitely a nice change with some great complexity. 🥃
Looks tasty, will have to give this one a try.
Hi Cara, Thank you for giving me my smile this afternoon. : ) George.
thanks for the upload I will have to try one!
Sounds like I'll be sipping that one this evening. Cheers!
I've been making this with rye and Amaro Nonino instead of Averna, and it's fantastic.
Thanks for posting this.. i am gonna try this tonight
I'm so adding this to my list to try. Currently waiting on a bottle of Averna to turn up. Thanks for the ideas.
Now I know this one as well....looks very yummy! Thank you Sweets!!!
Always great to have another cocktail to get the most out of that Averna bottle! 👍
This is a fantastic drink!
Cara's tasting & descriptions are so good it makes me want to try every drink. However, the Manhattan is my favourite whiskey cocktail. I haven't ever heard of Averna in a Manhattan. I must try!!!
Haha!
This was great !!! It got my mouth watering 😋
Another winner!
This is my favourite cocktail at the moment, great video :)
The classics always have the most variations cause that's how good they are. I recently made the Mahogany Manhattan which uses some cherry herring and is super delicious
Heering cherry liqueur. I had to look into that one. Sound like I need to try that!
Great video. Any amaro works really well, alone with the rye or bourbon, or mixed with vermouth. Rammazzotti, montenegro, fernet branca, rabarbaro, nonino, all make great manhattans
Amari are definitely a great sub for vermouth in a cocktail. Leads to some fun mixes for sure👍
I have recently tried my Manhattan with equal parts Carpano Antica Formula vermouth and Montenegro Amaro, and a nice rye of course int the 2:1 ratio. Gives a very nice body.
This looked so good I decided to use it to see what Amari are all about. Found Averna at my local wine merchant, took it home, and decided to try a little neat to see what I was getting myself into. And I'm hooked, on Averna at least. Made up a black Manhattan using .75oz Averna to 2oz Rittenhouse Rye, and again, hooked. Thank you!
Yass, love this!
My go to cocktail
Lovely! We've been making these and made up the name "Italian Manhattan", but now we know the official name for this delicious cocktail. Thank you!
I’m sure that works too!
I found out about this one very recently, it's becoming one of my favorites (I did like it more with Rye than Bourbon, for that extra kick of spice; used Sazerac Rye)
At home I regularly make a 'Manhattan' that's 2 parts Rye (currently using Basil Hayden's 10 Year Aged) and then 1 part each Amaro Montenegro and Antica Formula Vermouth. For bitters, I use Fee Bros Cherry Bitters. It's a bit of a go-to especially through the colder months.
Yum!
I'll be trying cherry bitters tonight can't wait
This sounds very interesting!
I've personally never tried Averna before, so I'll have to take a look around my local liquor store next time I venture there.
I love this drink, only Montenegro is my preferred amaro, as the first recipe I saw for this drink called for it. Goes great with Old Forester Rye. 2.5-1 ratio. I also use 2 dashes of each bitters and throw in a barspoon of syrup from the cherries.
That sounds good! Im new to the Amaro's so still experimenting. This one is looks to be a milder flavor?
Knob Creek Rye is such an amazing Rye, it's my go to for any Rye drink.
haven't tried their rye yet. What specifically do you prefer it over?
For me it’s just really well balanced and still a good price point - not as funky as Rittenhouse, not as dry as Bulleit etc etc 😊
Dear Cara Devine (Professor Emeritus of Mixology), You Rock!!!!!!!!!!!!
😇
Beautiful
Ouh that one sounds & looks terrific (Manhattan is one of my favorite whisky cocktail but I'm not a fan when it is too dry, I mean a bit frustrated, lol...so that twist on it seems great), never heard of this recipe before nor of Averna, but i'll check out if it can be found here, thanks ! 👍
Really feel like there are people that get paid to click the dislike button....how can you dislike this video?? Great info, fantastic quality!
There’s always a few haha
Does look like a nice variant. Been thinking about buying a bottle of Averna for a while . :)
This is one of my new favorite cocktails. I prefer the 2:1 ratio with black walnut bitters.
Ooh yum!
I'm just missing the Amaro Averna. In fact, I have the exact same 2 bitters and Knob Creek Rye in stock. Making a trip to the packie tomorrow!
I love that Calle 23 is back there with the other bottles. Sophie would love it.
Calle 23 is a fantastic tequila!
We’ve used it a few times, great stuff 😊
@@BehindtheBar Yep, got a case as wedding gift many years ago from Sophie.
Ok so I finally picked up a bottle of Averna and made this up with 2 oz of Alberta Premium (hehe) and 1 oz of Averna, with a dash of Fee Bros Aztec chocolate bitters and a maraschino cherry, and I think I've discovered my new favourite drink!
Yum!
That sounds amazing! I can almost taste how the chocolate bitters plays with the caramel notes of Averna. Great cocktail Jimmy! 👍
Oh Yes! That Alberta Premium is an experience. Glad I found a bottle before its gone. I mixed it with the Antica Formula and Angostura. You must try Fabbri Amarena Cherries. Expensive but totally worth it. I will have to try the chocolate bitters.
Just tried Four Pillars gin from down under, and love it. Would like to see a video of your take on it.
It’s great! I actually used it in a Negroni right at the start of the channel:
czcams.com/video/ZUjZy3H6keE/video.html
And knowing is half the battle!🍹
I like my Averna with a dash of orange bitter when I don't habe a fresh orange :) I think I will try a "dash" of bourbon next time too. But I think it will be hard to balance the bourbon/Averna ratio to really meet personal preferences.
Cara how am I supposed to know without you telling me in the outro?!?! Great content as always, the tradition Manhattan is my go-to cocktail and I will be substituting this next time.
4:43 , and it’s also in the chapter division title. So now you know...
Haha we never miss it!
Love these. I make it with Old Overholt bonded or Rittenhouse (won't break the bank USD). Super clean and helps balance the Averna. Another great riff on this is the Toronto Cocktail.
Rittenhouse costs A$90-110 (~$70-85) here in Australia and it kills me. Sooo much cheaper in the US, no idea why it's so expensive here
@@GuidoGautsch yikes! That is not good. After tax etc it is about $30USD.
It is cracking me up that you're making "So now you know" a separate highlighted bit! It's just so iconic!
You should see our merch 😉 haha
Glad you discovered my favorite drink.
For the Averna, use Mr. Black Amaro. Really delicious.
Good idea!
I got a bit carried away buying vermouth, now I know how to use it a bit quicker.
I need a video on how to make a mint julep! The Kentucky Derby is Saturday.
Oh damn missed it this year! Definitely for next 😊
Was just introduced to Averna this past Sunday when it was included within an Old Fashioned I ordered. I had to ask the bartender for the recipe: 1.5 oz Apple Brandy; .5 oz coffee liqueur; .25 oz dry curacao; .25 oz Averna; 1 spoon maple syrup; dashes of root beer bitters. It was incredible. I'm def trying this Manhattan tonight, thanks!
Sounds great. But thats not an old fashioned.
@@Imthecoach1 wow, I cannot slow clap, slow enough. The drink was listed on the menu as an “old fashioned”, probably because of the apple brandy and bitters. There are a thousand variations that bars list as OF’s. As a WI resident, home of the OF, it is one of the most argued over drink. Ultimately, who cares? But I’m glad that the internet is kept safe by your watchful, self important eye. Cheers to you.
@@ggold3357 You need a hug friend. Also the Old Fashioned was invented in Louisville, New York or possibly Chicago. Not WI. Sorry buud. There are some variations but this completely different. You cant call anything and everything an old fashioned.
I do a manhattan at my bar with 2 Rittenhouse, .5 Averna, and .5 Cynar and it is dope.
Yum!
Did you use a 3-to-1 ratio for the Averna and Knob Creek? Just wondering.
Now I have to go buy a bottle of Averna to try this!
Yes. Yes you will.
The tasting notes at the end felt a little more off-the-cuff today, making an already very approachable presentation even more so. I have Averna at home at all times and will be making one of these tonight.
Weellllll here we go! It's been a few years now since there's been a decent comment on this illustrious video. My wife was raised in northern Italy, but had a Sicilian mother who kept some Averna readily available in the family bar. This is where I learned to appreciate this nicely herbal amaro. Now, being that my wife does like to take sips of my evening Manhattan's and she also likes the occasional quaff of the Averna, I'm wondering how much we might enjoy this little side variation on the illustrious Manhattan.
Just made it as you had proscribed. Must say that I don't pick up too much of the Averna. Perhaps I should try it with the traditional Manhattan proportions to give it a bit more balls as you say. I do happen to split my whiskey between bourbon and rye - half each. Perhaps that is a factor as well.
Thanks for trying! I think if you drink Averna straight regularly you could definitely use more, it’s just quite a strong flavour so scares some people but it doesn’t sound like that would be the case for you 😜
@@BehindtheBar We love having the Averna neat as an accompaniment to some desserts - coconut cream pie being one. That said, I have tried the typical Manhattan proportions and I do have to say that I came away preferring your proscribed ratio. To me, the stronger Averna presence didn't work well. Great drink this is. I'll be making it again and again.
Where can I find the fat boy whiskey glasses? I did a search but couldn't find them. Just perfect for that particular drink!
They’re Denver & Liely bourbon glass 😊
Real nice, as always. ♥
Btw, can you make a video about the cosmopolitan? There are so many sources, right, but I'd like to see your approach and point of view... and hey, it's a crowdpleaser! 😅
For sure, definitely a strong modern classic!
@@BehindtheBar Omg, you answered [fangirl moment, sorry]!
Hi and thank you for making these videos. I started to like making cocktails thanks to you. ☺️ You are awesome. I have a question though 🙋♂️ : You always make cocktail for one person, can you tell us how to make it for two or more ? Do I simply need, for example, to double the proportions in the same mixing glass for two ? Or do I always need to do it separately ? Thank you for your advice. Best regards and keep on making good drinks for us. 😉 From Paris.
Absolutely, you can just double it but I generally make Max 2, maybe 3 at a push, in on mixing glass (definitely not more than 2 in a shaker tin or it won’t seal properly!). More than that and there won’t be enough ice 😊
@@BehindtheBar Thank you for your answer. Have a great day !
One view and subscribed!
Thank you 🙏
For me, a perfect Rye Manhattan, is a test.
I'm partial to Aztec chocolate bitters and Luxardo cherries in my Manhattans. I'm definitely going to try the Averna.
What, no love for Canadian rye?
Always! We don’t get enough of it over here.
I have 150 bottles in the cupboard and I still can’t watch a cocktail video without having to go to the bottle shop. This is the worst hobby! Although this looks delicious
😂
@@BehindtheBar If this guy has that problem how am I to have any hope? I've got 22 plus the bitters, and the gins and vodkas in the freezer, and I just don't have more space. Nevermind the budget.
Maybe I'll mix up a manhattan with some of our home made bourbon soaked cherries and stop worrying about it.
What about using amaro nonino? Too sweet? Or fernet branca? Too heavy? Thoughts?
With Fernet it essentially becomes a Toronto - definitely more full on and bigger but delicious if you’re into that! I reckon Nonino would be a little sweet but playing with the proportions would make it work 😊
How would this taste mixed with the Montenegro amari instead?
Good!
Wondering if any Amari would play well with the Scotch version, a Rob Roy
I reckon Nonino would go well with a softer Scotch like Dewars- those honey/apricot notes would be delicious!
Would Ramazzotti Amaro also work in this?
For sure!
I’m DEFINITELY not an expert but I’m surprised you said Buffalo Trace (my personal preference) with its lower rye mashbill (10%?)
Have you tried Basil Hayden in it?
While the regular BH Bourbon is only 80 proof for easy sipability, the 27% rye adds that pepper note.
Great point! I guess I was thinking if people want bourbon then their looking for something smoother anyway (rather than just using rye) and I find BT a great workhorse to have at home for basically any cocktail, but BH would certainly be delicious 😋
This was, in fact, delicious! Made it with Rittenhouse, which gave it a nice spicy note 😊
Im going to try this one for sure. The 100 proof Rittenhouse has become my go to cocktail rye.
Helo Ciara where can I buy this cool looking glass?
it’s a range of glasses made here in Melbourne:
denverandliely.com/products/bourbon-glass
@@BehindtheBar Thank you, I ordered one. It's gonna take some time to ship to Switzerland, I'm looking forward.
@@marcozg77 hope you love them!
Gotta track down some Averna
Sold! I’d just spotted Averna at a local shops BOGO sale (along with Mr.Black) but wasn’t sure what to do with it. Manhattan is my go to cocktail these days, so riffing on it is right in my wheelhouse. Or is that “Rittenhouse”. 🤷🏻♂️ Either way, now I know...
Haha!
The 'flipped' Black Manhattan is neeext level, very 'bartender' or Italian flavour profile haha
Definitely!
Where can I find that glass?
I would also love to know where I could find that glassware. Perfect
It’s Denver & Liely, the bourbon glass 😊
@@BehindtheBar thank you! I love that glass! Thanks for the great videos!
Ramazzotti is a an excellent amaro alternative, and it's cheaper than Averna
I do like Ramazzotti!
Can we get some of Ricardo's cherries?
Maybe if you ask him nicely!
Has anyone tried this with Montenegro?
Definitely works as well, just a little sweeter- personally I cut back the Monte a little 😊
Manhattans are my favorite classic, and I often do this with Sfumato. Also, I'm sure it's because I've already had a couple and I didn't get enough sleep last night, but this triggered my inner 12yr old at the 4:30 mark. "Pop a little cherry" *my brain - Hmm... I wonder if that means the same thing there...* "In the bottom" *my brain - haha. Oh My* "Nice little surprise" *my brain - LMAO Omg. I doubt that's nice as a surprise*
Hahaha!
How is this not called a Nolita?
Averna is good, tastes a little like coca cola. A lemon slice helps balance things out.
She said pop a cherry in the bottom hahahaha
I really tried not to laugh at that, but DAMMIT😂
She said ballsy 😂
fancy free or bees knees please....
We’ve done the Bees Knees!
czcams.com/video/6HyOu2A43wg/video.html
I love Manhattans, but am having trouble concentrating because I want to propose marriage to this beauty.
Unfortunately Averna changed their design recently. Now, it looks pretty bad and cheap. I don't now why they had to change it at all.
Sad, haven’t seen the new one yet
Cynar is a good one
Oh, like it's a big deal when it can't compare to straight brandy or cognac, or real tequila.
This video suppose to be 30 sec not 6 min
We have a quick video section for those with smaller attention spans 😉
Oh Honey, please check, you have a bugger hanging out of your nose... Nauseating...
Mike, she has a nose ring on her right side. Boogers don't usually glint in the light.
I think Mike is trying to be witty 🙄
