Good job 👍 TVP textured vegetable protein makes great mince, soya chunks also pretty geeat, hopefully you have discovered nutritional yeast as well. Did you know carbs are massively anabolic? I bet you did. Silken Tofu can be blended into stews and soups to add protein and thickness 👌

Cool recipe, if you replace the coconut cream by canned tomatoes and you're actually really close to a North African stew. They'd use a spice mix called "Ras el hanout" which is what you used plus more stuff and harissa instead of cayenne pepper.

Is Harissa hot like cayenne ? I'd like to try it hmm gotta look if sold here in Europe's Land of Thousand Lakes 🤔

Now seriously, I like slow cookers and I appreciate that they save meal prep time. I do prefer a hotter, more labor intensive cooking method on a regular pan. Do the spices with some oil first, then the onions, garlic, carrots, potatoes etc. While you are chopping one ingredient the previous ones are already cooking in the pan at low-medium heat. The mayard reaction (slightly burning the food on the pan in a controlled way) really enhances the taste and looks of vegetables. And at the end you end up with a ready to eat meal in perhaps 10 minutes more than your current approach, no need to wait for 6 hours.
Oh and I never peel carrots, just clean them well. I found I didn’t notice any difference after cooking them.

Need to get myself a slowcooker, bought one for a friend as a gift now i want one :)
Really nice to prepare alot of food easy, curries always hits the spot.
If you have an immigrant store closeby you should get some Curry leaves, fenugreek and mustard seeds. Takes it to the next level, dont forget the salt :)
