Weber SmokeFire EX4 2nd Generation St Louis Style Ribs

  • So, the Weber SmokeFire is more of a hybrid Direct/Indirect pellet grill/smoker, which means it can cook ribs very similar to the Pit Barrel and other drum type smokers. I made these using the "Smoke Boost" function for about 40 minutes, then cranked the heat up to 285f for the rest of the cook. These turned out Amazing! The Meat Church "Holy Voodoo" and "Honey Hog BBQ" rubs were a great combination for sure!

    Ribs looked great! My kids love one hour ribs ( baby backs ) off of my EX6. 375 and flip every 15 minutes. Always in the low 200’s.

    Pro tip, you put a large shallow aluminum pan underneath the lower grates right on top of the falvorizer bars.

      @@FireWaterCooking It’s a figure of speech Darren. I’ve been using this grill since it came out. One of the tricks i’ve learned throughout the many times I’ve smoked meat in it.

    Put a metal pan under with water in it. Regulate that temp, keep it moist and keep it from getting burnt

      no need.. Dreamland BBQ in Alabama cooks ribs over direct fire with no water pan and they are some of the best ribs in the country.

    Great videos ! I am looking at buying a new Pellet grill . Currently have a GMG which has been great . Looking at the Smokefire EX4 2 and wondering your opinion on it. People complain about greasefires ? Soot? what is your experience with these complaints and any other opinions you have on this model ??

      grease fires can be controlled by using a drip pan. This is the BEST pellet smoker/grill I have used and I have had several. This will truly get over 600f for searing and will not have any auger issues. love it!

      Clean the grill regularly and you'll never get a grease fire. If it's a long cook for something like Brisket, place a flat pan underneath the grates to collect the fat drippings. I've yet to experience a grease fire following these 2 suggestions.

    On my ex6 I cheat every thing to the left to avoid the hot spot immediately to the right ot the fire pot. Don't get me wrong I do use the Hotspot to my advantage so I don't look at it as a negative.

    Do you actual set it to smoke boost or turn temp to 180 deg? My grill is showing 200 deg with smoke boost on

      smoke boost temp will fluctuate and 20 degrees is acceptable..
