- My Irish family might lock me up for this, but I’m turning the St. Patrick’s Day favorite on its head by turning Corned Beef into Meatballs. But I’m still pairing it with a traditional Colcannon.
For a bonus, in this video I share a tip for grinding from my late mother who used this trick whenever she broke out the grinder.
Corned Beef Meatball Ingredients
3 lb Corned Beef
1 lb Ground Beef
1 egg
½-1 cup Bread Crumbs
Colcannon Ingredients
3 lb Potatoes
1 cup Half & Half (plus more as needed)
3 TBSP Unsalted Butter (plus 1 more for cabbage)
½ cup Chopped Scallions
½ Head Of Cabbage Chopped & Sauteed
Salt & Pepper To Taste

Awesome recipe! That looks amazing👍😊
When you said "I like them a little bit chunkier" I knew you were talking to me. Great video my friend. 👍
😂
Wow Rye! I love this idea! From this idea of yours, I can think of a million ways to work with your creation. Smash burger Rueben's come to mind immediately! You sir, are brilliant!!!!
For colcannon recipe check out the back yard chef on CZcams. He has a lot of traditional recipes. Definitely skins on. Thats where most of the vitamins are. Now the meat. This would make a great meatloaf, burgers on the grill, stuffed peppers, and the list goes on. You knocked this one out of the park. I will definitely try this.
The Concannon reminds me of the Dutch Stamppot dishes we eat in wintertime. We have boiled potatoes mashed, not supersmooth, but a little bit more than you have, and we mix it with either boiled and chopped kale, or boiled and finelchopped winter-carrots, or with chopped and boiled apples. All go with meat of choice and the ajus from that meat. Most of the time with the kale version we eat smoked sausage and very crispy bacon, and with the carrot version high end sausage, like the good German ones, and with the apple version a porkchop. Mnomnomnomnom sooooo tasty
Top notch Ry going to make that for sure! Happy Saint Patrick's Day!
Ry I will be sending this video immediately to my family. You had me when you said colemans mustard. A lil dab will do ya. Lol
Looks great. Hope you have a Happy St. Patrick's Day. Cheers, Ry! 👍🏻👍🏻✌️
My grandma used to use bread to clean her grinder
I am definitely trying this!
Glad to see you! Love the videos!!!!
Awesome video Ry, I’d never heard of colcannon, I’ll definitely be trying that.
Looks wonderful.
This is such a neat looking dish.😎👍
Never heard of colcannon, but how could you go wrong with taters and cabbage,I'll be trying this.
Great recipe Ry! I have one question, did you soak the corned beef to remove some of the salt?
No. Just a quick rinse.
@@CookingWithRy can you use caned Corned Beef 🥩?
@@maryjemisonMaryjay1936 I haven't tried that but I imagine it would work similarly :)
Why did you not cook them on the Weber for another added bit of flavor?
I sometimes cook in the kitchen. This could also be done on the grill.
@@CookingWithRy To be honest I subscribed to your channel because of all the ways you made great dishes outside on grills/smokers. I have duplicated a lot of your videos for that reason. It was just a little let down to see you using an oven.
@@kennybaumann2117 I try to cook many things not on a grill because a lot of people don't have access to one, or the weather doesn't cooperate at certain times of year. But most things like this that are made in the oven can easily be made using similar temps out on the grill :)
Hard to find the point cut around here.
