    From here in the UK i was always taught to do them in a saucepan only us a frying pan or Skillet when doing an omelet .And if you have a couple of eggs to spare try adding a little splash of water to the mix .helps make them fluffy .

      I, too, had never ever encountered that until a couple of years ago. My whole life, I put the salt and pepper in first and had no problems. Then, one day a couple of years ago, I made eggs and they turned grey from the pepper! I don’t know what made that day any different than all of the other days, but now I add the salt and pepper last, too...

    Gave this a shot. I must have messed something up, because my pot was a sticky mess. I wanted to add some sour cream and in that time I stopped stirring, so I think I singed the bottom of the eggs.
    The eggs still came out great, but I thought it would have been easier.
    I normally like using a griddle. Scrambling the eggs first and melting the butter in the pan. Guess I'm old school.

    Have you ever tried leftover rice and scrambled eggs. In a frying pan melt about 3 tablespoons of butter and add cooked rice two or three cups. Warm for a few minutes until rice is good and warmed up through out. Number of eggs and butter and rice is to your liking. Now just add eggs and scramble. Salt and pepper as you like. Such a warm and nuetral mild taste for breakfast. This is so simple yet so delicious.

      That's how my mom made fried rice with the addition of diced onions and mixed veggies! -then soy sauce, of course! Delicious!

    I have creme fraiche, but I don't have a non stick pan. All my nonstick are fry pans, so I'll not be afraid to use it but keep the heat to a minimum, and a small one also. Also, more and more people are talking about using Chinese soy sauce to flavor eggs rather than salt. It has salt in it, and adds that extra flavor that's very agreeable with scrambled eggs. Just my two cents worth.

    Do you do 3 eggs at a time if your gonna do 9 eggs or all 9 at once ? Reason I ask is because the pan will not be cold anymore or just have more pans ?

      I don't get my recipes from anywhere. I develop them myself. This method for cooking scrambled eggs is a combination of multiple methods taught in culinary schools. One of the methods that this is based on has been made particularly famous by Gordon Ramsay.

      @@Thestayathomechef, Thanks. It's a texture thing unfortunately. I did have some that weren't wet on a cruise ship and they were heavenly. Fluffy poofy non wet, with some sourdough toast. Yum!
