eggplant, steam it,remove the skin, mix it w/ tomato, cilantro, garlic and onions, balsamic vinegar, olive oil a litle salt n sugar...believe me its spectacular !!!
Sisig! It's uniquely Filipino. Concocted in Pampanga. It may be unhealthy food, but it's damn good! And even grrreat with a cold frosted bottle of beer, sitting on the beach, under a thatched nipa roof, with the sun beating on it at mid-day, ! I prefer it with San Mig Super Dry!
At home we usually just cook the eggplant with 1 beaten egg. Put the two ingredients together and mash the eggplant until its flattened and soaked in the egg. Season it a bit then fry. We usually over fry the egg so it becomes like a crispy coating to the eggplant. The sauce is simply just banana ketchup or calamansi soy mix
The egg plant you want the narrow long version not the large Italian type. Slice then you salt rise off pat dry dip in plain season flour then batter when you deep fry you dont want oil too hot over wise out side cooks before is too cold soaks up oil you want 160 c then lift out then in hot hot 180 c like you cook 2 times cooked chips

Our trick at home in making sisig is use tofu to replace some of the pork meat, which makes it healthier & guilt-free when eating an otherwise grease-heavy dish.

that eggplant you are describing is another version/variety of tempura... just like the ebi tempura, that eggplant is considered part of veggie tempura. cooking at home, you only need tempura batter that you can buy in local grocery shops, like at shopwise, all day etc etc
Have tried Kalui when we were in Puerto Princesa yrs ago...and yes their food is great...👍and i love the ambiance also ..😍 had that naughty dessert too...😂😂☺️

Re eggplant tempura, get an air fryer. You'll get a crispy non-oily outside and a juicy flavorful inside. Great for lumpias and lechon kawali as well.
