    Join me for a Highfalutin' Original Recipe that's sure to be a favorite Thanksgiving side dish or holiday casserole. We take the traditional green bean casserole recipe and turn it on it's head. The secret to this keto casserole is finding a substitute for the traditional condensed cream of mushroom soup. We take a little extra time to make a low carb substitute for Campbell's Cream Of Mushroom Soup. The full recipe is below to make it easy to copy and paste for printing.     LOW CARB GREEN BEAN CASSEROLE RECIPE
    Ingredients
    Soup:
    3 tablespoons butter
    1/2 half white onion, diced
    12 oz. white button mushrooms
    1 1/2 cups heavy cream
    1 1/2 cups chicken broth
    3 ounces cream cheese
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/4 teaspoon garlic powder
    Casserole:
    2 tablespoons avocado oil or butter
    2 pounds green beans, trimmed and cut
    12 oz sliced mushrooms
    1/2 white onion, thin sliced
    1 cup shredded cheddar
    Topping:
    1/2 cup grated parmesan cheese
    1/2 cup crushed pork rinds
    1/2 cup sliced almonds
    Instructions
    1. In a food processor, pulse the 1/2 white onion and 12 ounces of mushrooms until finely chopped.
    2. In a large skillet, melt the butter and saute the onion and mushroom mixture over medium heat until cooked thoroughly, about 8 minutes.
    3. Add the heavy cream, chicken broth, and cream cheese to the pan and reduce over medium-low heat for 8-10 minutes, stirring frequently to prevent burning. Remove from pan and allow to briefly cool.
    4. Wipe out the skillet, and melt the butter or oil, and saute the additional sliced onions and mushrooms until tender, about 8 minutes.
    5. While this cooks, blanch the green beans in boiling water for about 7 minutes, or steam in the microwave in a glass bowl with 1/2 cup of water. Drain well.
    6. Spray a large casserole dish with cooking spray. Mix together the blanched green beans, sautéed mushroom and onion mixture, shredded cheddar cheese, and most (maybe all) of the reserved mushroom soup. Combine well.
    7. Cook in a preheated oven at 375˚F for 20 minutes. Stir well. Sprinkle the topping over the casserole and return to the oven for 10 more minutes.
    8. Allow to cool and enjoy!

    Okay, made this today and it is seriously delicious! Even had enough soup left over for a cup for early lunch. At the last minute, I was feeling lazy (It’s just me for Thanksgiving) so I used 2 cans of French cut green beans, well drained, and halved all the rest of the ingredients. I made it into 4 individual casseroles in my air fryer and it is perfect! I’ll try freezing at least one to see how that works, but I’ll have a couple of helpings for leftovers for the next couple of days. Thanks so much for the recipe - I knew if YOU posted it, it would be delish and you didn’t disappoint!

    OMG This was the best green beans casserole I have ever made! I added a few more spices and seasonings to the soup, and used frozen French style green beans. The soup was so good I ended up licking out the pan. I have made green bean casserole from scratch many times but none of those recipes were as good as this keto version. this is definitely going into my favorite recipe file.❤

    I made this for our Thanksgiving today and my kids loved it. I put the real fried onions on their side and the nuts on my side. Had soup leftover for tomorrow. Thank you so much! I also made one of the sugar free pumpkin pies and it’s delicious. I’m freezing the rest for Christmas. I’m going to make the sugar free pecan pie for Christmas.

    OMG! That looks delicious! I’m the only person I know who can’t stand green bean casserole. And it’s mostly due to the soup and soggy fried onions on top; that’s what happens when you cart it an hour in a sealed container, lol. Throw in some cubed ham or shredded chicken and you’ve got a weeknight dinner! Love your channel. Keep on Siftin’!

    Tis the season for Green Bean Casserole... Just today Papa G had a recipe too... His didn't include mushroom soup, but he did introduce me to Non-Coated Crispy Fried Onions from India available on Amazon ... I just ordered them. I don't know if Thrive has them also, they may. I live in Hawaii & haven't looked into Thrive, very few companies ship here cheaply but my Amazon Prime does, so I use it quite often...

      I just received the onions today... They aren't exactly like French's, but if you're Keto they're a good substitute. They are more like crispy fried minced onions & taste great. It was only $5.99 for 1/2 lb. pkg... That's actually kind of a lot...

    I did keto for decades with good results but as the years went on the struggle was just harder and harder and instead of progress I was doing good just to maintain. I decided this year to do something more drastic and had a bypass (with amazing results so far). I still LOVE your channel and this recipe looks GREAT. The store bought soups with all those chemicals and ingredients that i can't even pronounce is what I am avoiding these days. Whole foods and simple ingredients are what make a dish taste so much better to me now (not to mention being healthier). I can't wait to try this.     Fabulous! I need this! Hint: on my cuisinart, I put my finger on the middle hole and reach up and hold the cutting blade from the inside. This lets me dump/scrape/pour without having the blade fall out.

    Tip: Blend the mushrooms first and then add the onions and finish. That'll make blending much easier.

    I grew up in a family that doesn't like mushrooms, and so have always made my green bean casserole like my mama did with the condensed cheddar cheese soup instead of the cream of mushroom. For those that don't like mushrooms, give it a try (make a keto cheese soup) It's a GAME CHANGER!

    I made this cream of mushroom soup for yesterday for Thanksgiving... I did not have any heavy whipping cream so I used my unsweetened among milk and it turned out great..my daughter ( who is not doing ketone) said it was good.. And she can cook! I will try it next time I will try the cream..

    Hi Wes, I hope you and your family had the best Christmas ever. I just wanted to thank you for this awesome recipe. Not only is this the best version of Keto green bean casserole I could have ever hoped to find but the "Cream of Mushroom" soup is so good, I almost didn't have enough to put in the casserole because I had to "taste" it SEVERAL TIMES lol. It is my new favorite staple for those cold nights (making some more tonight). Anyway, please, continue your videos, stay sweet and much love to you and your family. Praying for 2021 to be a much better year for all of us.

    Nice! Yours looks really good. I make mine differently. I sauté the onions and mushrooms diced up and seasoning it with salt, pepper, a little bit of garlic powder and a little nutmeg. Then I add the green beans in the skillet and more seasonings. I like to get a little color on them. Then I add a little chicken stock to scrape the bits off the pan then I add cream cheese and cream. Once that thickens up I put it in a baking dish and bake it at 400° until it’s bubbly. So so good.

    Thank you for saving me from myself! I would have just caved and used the can soup, and now I don't have to! I'm making a pecan pie you did in the pecan pie battle (I made it last year for Thanksgiving too!), and I'm experimenting with mashed radishes instead of potatoes, with homemade keto turkey gravy. Keeping it simple this year with a keto pumpkin cheesecake to round out the meal for the non-pecan lover in the house. I'm so excited to make this Wes.     I made this for Thanksgiving this year 2021 and everyone loved it and said it was the BEST they had ever had! I made a little extra cream of mushroom soup the night before on purpose to be able to have it for dinner...oh YUM! The homemade soup MAKES the dish, no question. I also really enjoyed the topping...nutty, crunchy and savory. Thank you! I'm a new subscriber.
