    Parkia Speciosa, is the official scientific name, but you’ll also hear them called stink beans, bitter beans, petai (Malay), สะตอ (sataw in Thai), and a variety of other names. I prefer to call them stink beans - because even though I don’t think they really stink in any way, that makes a statement - that makes them stand out, and you know they are not just your average veggie. #stinkbeans #Thailand #plantbased
    Nakhon Si Thammarat, Southern Thailand - Stink beans are popular to eat throughout Southeast Asia, especially Southern Thailand, Malaysia, and Indonesia, and they are often eaten raw, pickled and preserved, or most commonly cooked with something spicy, like chili sambal or curry paste.
    After we harvested some fresh stink beans - it was my first time, and it was awesome - we then headed back to the house and Aunty got started cooking. I asked her to make a completely plant based Thai curry, so she included some on hand vegetables from the garden including luffa, eggplant, and a heap load of insanely spicy chilies. This entirely plant based / vegan / vegetarian Thai food curry was packed with flavor, and Big On Spice!

    Much love from NE India. Here in Manipur, we call it yongchaak ( which literally translates into Monkey Rice). It's a highly savoured delicacy here, eaten in the form of salad(singju), potato and stink bean chutney (iromba), sometimes fried with fish head, gills, innards (maringkha) and a lot more dishes.
    It is so much in high demand that often they are imported from Burma at the border town of Moreh. Unlike other SE Asian nations where only the seeds are savoured, here in Manipur we scrap off the outer green skin with a special tool called Yongkhot (looks like a tongue cleaner) and savour the hypodermis along with the seeds.
    Consuming too many seeds often results in stomach aches, but every Manipuri will swear by this delectable fortune.

      In all fairness, I don't think it's the beans that cause stomach ache, but the chillies they're prepared with, because no one makes stink beans without chillies :) It has to be extra spicy

      been to most of the south east asian countries like north east india, myanmar, vietnam, thailand etc.. but the taste that i had of stinkbeans in Manipur( northeast state of India) with the mash potatoes and some herbs and veggies..if i recall..its called eromba or eronba..was the best spicy delicacy of stink beans that i have ever had and people should try the food culture and visit astonishing places in Northeast India..especially Manipur.

    Mark you've travelled through out the world and explore many food cuisine and recipe from different places. You even enjoyed our Indian food and thanks for that. But did you ever notice that stink beans is one of the most highly valued side dish in north east India especially in Mizoram that even at the rate of high cost, nothing can stop us from buying it. And so do the climbing wattles (khanghu) and that numbling plant (Amella oleracea/Ankasa) you tried at Amazon, Brazil and many more.. By the way our cusine is simple pure and natural yet unique..     Hey Mark Weins. Actually Petai can be eaten with the skin. Just scrapped out the green skin a bit. Then you cut it just as you like. Cook it with prawns or Anchovy Sambal
    Its delicious and healthy for us.

      Yes... you can eat it with the white skin still attached... and in my experience, eating it with the white skin still attached, will help to lessen the "stink" when you take a pee... 😁

      We can scrape the skin or you can roast the beans and peel it. It's really tasty when cooked with tomatoes and fermented fish. It is found abundantly in northeast India🇮🇳

    I really really love stinky beans.. Here in Manipur we peel off the green outer cover only then boil it in hot water for a minute or two and then mixed it with roasted fermented fish and hot chilli.

    I remember when I was little, I went to my grandfather's land where there's petai trees. I'd come back home with sacks of petai, my mom would peel it and put it on Tupperware so we can cook it later. The tiny green worms were all over the floor 😂

    We used to clean the skin with a special handmade instrument and eat it whole not only the seed but all. This is total waste 😂😂😂 its so expensive that we treat it like gold.

    Petai is just amazing. The smellier the better. The smelliest I've ever tried comes from Indonesia!

    My favourite food petai sambal. I had been eating this dish from a very young age. Still cant get enough of it.
    In fact everyone in my family love it.
    If you have a variety of good food on the table together with petai all of us dash for the petai.
    Fruit wise no need to say it's always durian.

    many Malays surely like to eat the raw stink beans in a form of an appetiser called "ulam" alongside with the spicy sambal. the petais are also commonly used in other homecooked spicy dishes like the prawns and anchovies cooked in spicy red sambal not only to give a pungent flavour but also some vibrant colours to these dishes. i have to tell you that its real pungency comes from the fart right after eating the petais but it's worth the aroma for those who like it!

    We eat this in our small State of Manipur which is in the North easten part of India and we call it "Yongchak".

      it taste good..with balance of bitter and little sweet taste,you can eat it raw or cook it..the problem is your pee will have a strong odour smell after eating this stink bean..😁😁😁,i suggest eat a little only ok...

      Eat it with fresh cucumber and basil leaves...it will stabilize the odor.....my mother told me i can eat that stinky bean after i finish high school....lol.....now when i tried it i feel dizzy....

    We usually cook with grinded dried chilli and anchovies. It's usually a very heaty vegetable if I'm not mistaken same as durian. So usually we will always have something cooling to drink like barley water for example.

    Man..... petai tree AND rambutan tree... absolute paradise. Long time displaced Indonesian in Canada here. Looks so good. Can only get them in meagre 100 - 200 gr frozen packets here, but still grateful. My mom used to mellow them in a stew / curry. Was so yummy! Problem is you sweat, pee, poop, toot stink bean aroma for the next 2 days. 😂🤣, worth it though. 🙃

    Love the vegan content mark!! stink beans were one of my favourite foods when I visited Thailand, I especially liked it to buy them from a fresh market in the pod, and eat them raw with vegan nam prik I would buy from a JAE restaurant, it was a flavour explosion 😄😭 definitely one of the best foods in the world

    We Manipuris call it yongchak. It hurts me when you guys wasted the cover. We eat the cover along with the seeds after scraping off the green layer. We use yongchak in different type of dishes. But my personal fav is Yongchak singju.
