Follow these steps
Put the disc in your console
Delete the app (not your save files, just the app)
Disconnect from the internet (unplug ethernet, turn off Wi-Fi)
Leave the internet off and restart the game (no internet means your game won't update)
Let the game copy
You should be on the base version of the game (1.00)
Start the game
Go to the store. If your rep is high enough you'll be able to get some rare jerseys in the store, and buy the basic and special celebrations. There's also clothes and shoes that aren't in the game anymore.
Also, if you start a new character in the 1.00 version of Live you can get some glitchy traits that kinda break the game. Imagine a 6'10 Playmaker build w/ an 82 three, 82 on ball defense, and an 83 steal... It's kinda broken.
Sorry it's so much text, there's no short way to explain the method.
