  • In the video today we will make a simple and delicious Homemade chunky ( Original) Branston Pickle that tastes as good as the real thing! It’s made with a mixture diced up vegetables and fruit and cooked slowly for about one hour and a half. This pickle is a British favourite and often served with cheese or the classic ploughman’s lunch that I will show you in the next video.
    Ingredients
    A splash of oil
    1 carrot
    1 medium Swede
    2-3 garlic cloves
    9-10 Prunes
    ½ Cauliflower
    1 onion
    1 apple
    6 Gherkins
    ½ courgette
    270g Dark brown sugar
    2 Tbs Tomato paste
    Juice from ½ lemon
    350ml Apple cider vinegar
    350ml water
    1-11/2tbs Mustard
    1 tsp Allspice
1 tsp cayenne powder ( use ½ if you don’t like spicy)
    Salt & pepper to taste
About 100mlWater (a little extra for the last 30min)
    Tips
This is a flexible recipe so if you add a little more or less of one ingredient its ok.
When you fill the pot with water/vinegar it will not look like much but once they vegetables and fruit cook down it will be ok.
Simmer for a hour then check the flavour and consistency. I find that usually and extra 30 min is the right time for the vegetables to have some bite and not be mushy! But feel free to cook a little longer if you want. I usually cook until I have the right sauce consistency. (Total time 1 hour and a half)
Let it cool down a little before placing in jars.
Completely cooled down until you place a lid. I refrigerate mine and they can last several weeks but mine only last about 2 weeks, as it tastes so good.

So I am thinking, to convert this to a diabetic/keto friendly recipe, I would need to remove the brown sugar and dates/prunes and replace with monkfruit sweetener and a thickener like Xanthan Gum - probably add some courgette / zucchini also ?

I am making this right now. It is the third time making it. Perfect recipe. You need to make it before the last batch finishes as it is best having been left in the fridge for at least two weeks before eating. I too live in a very far flung country and really appreciate being able to make my own Branston pickle so thank you very much for this.

Thank you so much for making this tutorial I'm a qualified chef by trade but never really ventured into pickles, I think the closest I got was a caramelised onion chutney. Anyway, I've become a massive fan of cheese and pickle sandwiches and wraps and got to thinking I can take them to another level with homemade pickle, well here I am watching your video whilst on my lunch break at work. I've got all the ingredients other than prunes which I'll get ready for the weekends cooking session.

Bruh I just wanted to know what was in Branston pickles beside pickles 😆 based on their appearance in other vids I honestly just expected it to be pickles and molasses or maple syrup. This on the other hand is a whole fruit and veggie salad plus sugar, spices, and condiments. Whoever had the mind to combine all these flavors in a way that thousands of ppl enjoy was a genius
